Apple Pie Ice Cream (Vegan, Paleo)

I know we are getting close to the beginning of fall, but ice cream is always a good idea. 🙂  This Apple Pie Ice Cream is so awesome!

It seriously tastes like an apple pie ala mode.  The best thing about this apple pie ice cream?  It’s made healthier!  I was licking the spoon as it was churning in the ice cream maker.

This might just be my most favorite ice cream recipe ever.  I used my crock pot applesauce for this recipe.  I highly recommend doing the same.

Slow cooking the apples in all the spices brings out the natural sugars and creates a great flavor profile for this recipe.  I think that is what brought this over the top for me.

I am going to have a hard time sharing this one with hubby and the kids. 🙂

Pumpkin Creme Bars (Vegan and Gluten Free)

Pumpkin Creme Bars.  OMG!  These pumpkin creme bars are amazing!  Since it’s technically September, it’s okay to start rolling out the pumpkin recipes.

One can never have too many pumpkin recipes right?  Especially when they are healthy pumpkin recipes.

Since it’s still in the 100’s here in Texas, I thought my first pumpkin recipe of the season should be a frozen treat.  So I am starting with these pumpkin creme bars.  These bars are so easy to make and the recipe only contains 9 ingredients!

These pumpkin creme bars are vegan, gluten free, dairy free and even paleo friendly.  If you needed a nut free option, I suppose you could use pumpkin seeds or sunflower seeds in place of the pecans.   I love everything about this recipe.

Starting with the cinnamon pecan crust, then the creamy pumpkin center and it’s topped with creamy chocolate.  If you are a lover of all things pumpkin, you may also enjoy this post.

Vegan Pad Thai

I just love Pad Thai.  Now that I am vegan, I wanted to make a Vegan Pad Thai.  This vegan pad Thai came out really yummy!  In addition to being vegan, this healthy pad Thai recipe is also gluten free and grain free!  I used zucchini noodles to make this healthy pad Thai recipe.  I just love my spiralizer.  That is what I used to make the zucchini noodles.  Totally worth getting in my opinion.   This super easy recipe can be made up in no time at all.  If you like to use your spiralizer, you may also like this and this.

I highly recommend keeping the sauce and the vegetables separate until you are ready to eat.  The zucchini noodles can release moisture that can make the sauce seem a bit watery.  I actually spiralized my zucchini the day before I went to use it in the recipe.  I just stored it in a strainer with a bowl underneath to catch the excess water.  It seemed to work well.   We actually ate this meal cold, but I am guessing you can heat it up as well.  This may not taste exactly like traditional pad Thai, but it is a great option for vegans. Blueberry Muffin Smoothie

You guys!  This blueberry muffin smoothie is so good!  If you have been following this blog for awhile, you know I prefer to add real food to smoothies instead of protein powder.  I think protein powder is too expensive and I also prefer to eat things the way nature intended.  This is my latest healthy smoothie recipe.   This blueberry muffin smoothie contains 8 1/2 grams of protein.  It is a breakfast that will keep you full for some time.  If you can’t eat oats, quinoa flakes would be a good substitute.   1/4 cup of quinoa flakes contains about 4 grams of protein.  You can whip this healthy smoothie up in just minutes!

Another great thing you could do with this smoothie recipe, is make popsicles or smoothie pops with it.  I like these molds.  My kids love them too! You could probably even sneak some greens in here.  The blueberries would mask the color and the banana would mask the flavor of the greens.   Trust me.  I fool my kids all the time. 🙂

Healthy French Onion Dip (Vegan)

Healthy French Onion Dip. French onion dip seems to be a staple at outdoor parties.  Well I have made you a healthy French onion dip!  Not only is this French onion dip healthy, but it is also vegan and dairy free.

This healthy vegan French onion dip is a cinch to make too!  You only need a few simple ingredients!  If you like this recipe, you may also like my dairy free ranch dressing and my dairy free sour cream.

To keep my French onion dip dairy free, I used cashews as a base.  If you don’t have issues with dairy, you can use Greek yogurt as a base. I wanted to keep my homemade French onion dip vegan though. 🙂

You could serve this with raw veggies or chips like I used in the photo.  The chips I used are Beanitos and they are delicious!  They are a great alternative to regular potato chips.

Peach Streusel Muffins (Vegan, Gluten Free)

Peach Streusel Muffins. My daughter loves peaches so I thought I would make her some peach muffins.  Streusel muffins to be exact.  Because muffins are always better with a streusel topping right?

These peach streusel muffins are made healthier.  In fact, the muffins itself has very little added sugar.  I used diced and pureed peaches to sweeten these.  The peach puree also kept these muffins super moist without the need for oil.  If you like these muffins, you may also like these and these.

The only time I used oil in the recipe was in the streusel topping.  Even then it was only 1 tablespoon.  These peach muffins are vegan and gluten free.  I hope you enjoy them!  These muffins freeze well, so make a double batch if you wish. 🙂
