Chocolate Peanut Butter Cheesecake (Vegan)

Chocolate Peanut Butter Cheesecake.  My husband Marcus is a sucker for anything with chocolate and peanut butter.  So I created this chocolate peanut butter vegan cheesecake with him in mind.

This healthy cheesecake is made with no refined sugar, gluten, grains or dairy!  Unlike traditional cheesecake, this recipe is no bake and can be made very quickly!

t starts with an almond date crust, then you have the creamy chocolate and peanut butter layer, and lastly, it’s topped with a decadent peanut butter frosting.

Yum! I could seriously have eaten the frosting by itself!  So good!

Chocolate Coconut Quinoa Cookies

I have a new no-bake cookie for you today. These Chocolate Coconut Quinoa Cookies are delicious. They are vegan and naturally gluten-free.  You only need a few simple ingredients and there is no food processor needed!

I think these cookies are healthy enough for breakfast too.  The quinoa flakes and nut butter add a nice amount of fat and protein, keeping you full for a while.  If you don’t want to use quinoa flakes, you can use quick oats instead.

This recipe is also easy to make nut free by using sunflower butter.  I imagine it should work out just fine.  These healthy cookies literally took 5 minutes to whip together too!

I know I have said my Flourless Salted Caramel Cookies are my favorites, but these turtle cookies are high on the list too. They are vegan, gluten free and paleo friendly. Plus, you only need a few simple ingredients to make them!

I love baking around the holidays. Chocolate Almond Butter Mousse Pie

Calling all nut butter lovers!  This Chocolate Almond Butter Mousse Pie is a must try! It starts with a date-sweetened almond pecan crust.  Then it’s filled with a luxurious almond butter chocolate mousse.  This pie may have a few steps to make it, but it’s completely no-bake and very simple despite the long instruction list.  It’s worth every minute.

This pie kind of reminded me of my chocolate mousse pie.  It’s also similar to my chocolate pumpkin mousse pie.  You really can’t go wrong when you are talking about any chocolate mousse!

This rich and creamy pie is no-bake, vegan, gluten free AND paleo approved!  So it’s basically for everyone and needs to be a staple at your holiday dessert party.  Trust me! I hope you enjoy it as much as we did!

If you need a nut-free version, you can make the crust out of sunflower and pumpkin seeds and then use sunflower butter in the filling.  Another great idea would be to sprinkle some coarse ground sea salt on top.  Yum!  I will be trying that next time for sure!
