I knew the recipe was going to be good, when I felt the urge to eat the batter with a spoon!  Seriously!  You need to try these blondies asap.

They are super easy to make, and they come with a boost of protein and fiber. 🙂  I’d venture to say they are healthy enough for breakfast. 🙂

Raspberry Macaroons (Vegan and Gluten Free)

Raspberry Macaroons that are vegan and gluten free.  I am loving all the spring produce!  I picked up some raspberries to make these Raspberry Vegan Macaroons for you guys.

They are super easy to make.  Just a handful of ingredients and no cooking required!  I think this might work with other berries as well.

These take about 5 minutes to whip up.  Then you just need to let them chill in the fridge.  This recipe is also nut free for those that have kids with nut allergies.

I added chocolate chips to mine, but you can omit those if you like.  I just love the flavor combo of raspberry and chocolate.

Vegan Chocolate Lovers Brownies

These Chocolate Lovers Brownies are amazing!  I am not a huge chocolate person and I couldn’t stop eating them.  These healthier brownies are vegan, gluten free, paleo and no bake.  There is even a nut free option with these chocolate lovers brownies.

I whipped these up in no time at all.  They are so rich.  Almost like fudge.  A little bite will satisfy you.  If you love brownies, you may also like my super moist flourless brownies or my no bake peppermint brownies.

I let my brownies chill overnight in the fridge.  They set up great.  I bet you could speed up the process by putting them in the freezer for 30 minutes to an hour.

I used macadamia nuts in this, but any nut will do.  I bet sunflower seeds would work well too.

Coconut Berry Fudge Cups (Vegan)

You guys!  These Coconut Berry Fudge Cups are so good!!  If you like my coconut almond fudge, or my lemon coconut fudge, then you will also love the coconut berry fudge cups.  They best part?  They are super easy and only take 4 ingredients!

Only 2 tablespoons of added sugar in the entire batch.  I made mine in standard sized muffins pans, but you can also do these in mini muffin pans for a bite sized treat.

Blueberry Crumb Bars (Vegan)

I am a big fan of fruity desserts.  That is why I made these Blueberry Crumb Bars.   These Blueberry Crumb Bars are actually healthy enough for breakfast too.  They didn’t last long at our house!  I made these healthy crumb bars oil free too.

We are currently staying at my inlaw’s house as our kitchen gets renovated.  I can tell you that everyone  in the house enjoyed these crumb bars.  If you like fruit bars, you may also enjoy my Homemade Nutri-grain Bars or my Homemade Fig Newtons.

I went a little overboard on the jelly, so mine is oozing out the sides.  I recommend not spreading the jelly all the way to the end.  Leave about a 1 inch boarder because the jam will spread.

These were still delicious though.  In addition to being oil free, these bars are also gluten free and vegan. 🙂  This recipe was adapted from my Pumpkin Raspberry Oat Bars.
