3 Ingredient Thumbprint Cookies

I love recipes with minimal ingredients.  These 3 ingredient thumbprint cookies are so easy to make!  They can be made in less than 20 minutes!

These 3 ingredient thumbprint cookies would be great for cookie swaps during the holidays.  I used raspberry jam in mine, but you can use any jam you like.

I think these thumbprint cookies would be great with my blueberry chia jam too.  Yum!  These healthy thumbprint cookies are flourless, vegan, gluten free and paleo.

If you have someone with a nut allergy in your house, you can use sunflower seed butter in this recipe as well.  Or if you prefer almond butter or peanut butter.  I think the peanut butter would give it a pbj&j feel.

Yummy!  I chose cashew butter because it is buttery in texture and mild in flavor.   I made my own cashew butter, but grinding up some cashews in the food processor for about 10 minutes.   You can also use store bought cashew butter if you like.

If you choose to make your own cashew butter, but the cashews in “pieces” vs whole cashews.  The pieces are often much cheaper. 🙂

Healthier Pineapple Upside Down Cake

Healthier Pineapple Upside Down Cake.  This pineapple upside down cake is made healthier with whole grain flour and no refined sugars. It’s also vegan and gluten free.

This healthy pineapple upside down cake is super easy to make too!  I was amazed at how rich and buttery it tasted.

The pineapples caramelize during the cooking process so they are super sweet and juicy.  I used coconut butter instead of butter and it came out great. I don’t think you could taste the coconut at all.

Just caramelized pineapple deliciousness! I have also used coconut butter in my lemon blueberry cookies.

I used sorghum flour in my pineapple upside down cake because I like the cake-like texture it produces.  It’s great in my pumpkin chocolate chunk cookies.

I am sure you can probably use gluten free oat flour as well.  This takes no time at all to make and your kitchen will smell amazing!

I know traditional pineapple upside down cake calls for maraschino cherries, but I didn’t want to use those since they are not healthy at all.

I garnished mine with dried cherries after it was cooked.  You might also be able to use frozen, thawed cherries.  Or you can just leave it plain.

Apple Pie Ice Cream (Vegan, Paleo)

I know we are getting close to the beginning of fall, but ice cream is always a good idea. 🙂  This Apple Pie Ice Cream is so awesome!

It seriously tastes like an apple pie ala mode.  The best thing about this apple pie ice cream?  It’s made healthier!  I was licking the spoon as it was churning in the ice cream maker.

This might just be my most favorite ice cream recipe ever.  I used my crock pot applesauce for this recipe.  I highly recommend doing the same.

Slow cooking the apples in all the spices brings out the natural sugars and creates a great flavor profile for this recipe.  I think that is what brought this over the top for me.

I am going to have a hard time sharing this one with hubby and the kids. 🙂

Pumpkin Truffles (Vegan and Gluten Free)

Pumpkin Truffles.  Are you sick of pumpkin yet?  I am so obsessed with pumpkin recipes these days.  These pumpkin chocolate truffles are delicious and they would be perfect for a Thanksgiving dessert.

These pumpkin truffles are a little bite of heaven.  You only need 7 ingredients to make them!  They are vegan, gluten free and paleo.  Imagine a pumpkin cream covered in chocolate.

Perfection!  I used chocolate chips in my recipe, but this would also work with my 3 ingredient chocolate recipe.  If you choose to use that, don’t add the milk.  Just make the chocolate sauce as is.  I hope you enjoy this as much as I did!
