Vegan Nanaimo Bars (Gluten Free)

Vegan Nanaimo Bars.  I must be honest.  I had never heard of a nanaimo bar, let alone vegan nanaimo bars.There was a discussion about these bars in the healthy living Facebook group I run.

Apparently, the nanaimo bar originates from Nanaimo, British Columbia.  It’s a bar that requires no baking.

There are 3 layers to the nanaimo bar.  The bottom is a chocolate, wafer-like layer, followed by a creamy layer, and topped off with a chocolate layer.

I thought I would try my hand at a vegan nanaimo bar.  I have never tasted a real one, but I improvised based on some non vegan recipes I found online.

My vegan nanaimo bars are also gluten free, grain free and free of refined sugars.  In fact, there is very little added sugar at all in my recipe.

These homemade nanaimo bars are very decadent.  In fact, just a little piece would satisfy your sweet tooth.  There are 2 ways you can do the creamy layer.

I used coconut butter and got a harder layer.  If you want a softer middle layer, I suggest going with coconut cream instead of coconut butter.  I hope you enjoy this.

Double Chocolate Ice Cream (Vegan, Paleo)

Double Chocolate Ice Cream.  Yesterday, I asked my daughter what she wanted to help me make.  She requested chocolate ice cream.

She is a huge chocolate fan, so of course we had to make it extra chocolatey ice cream!  Homemade ice cream is so much better than store bought.  You can control the ingredients.

This ice cream is also packed full of chocolate chips.  A must try for any chocolate lover.  My husband and older daughter are the true chocolate lovers in our family.

My baby girl and I are vanilla fans.  This ice cream recipe is vegan, gluten free and dairy free. I hope you enjoy it.  You can make this in about 20 minutes!  If you don’t have an ice cream maker, you can always pour this into popsicle molds

Quinoa Cookies (Vegan and Gluten Free)

Quinoa Cookies that are vegan and gluten free.   YES.  I am always thinking of what I can add to my cookie recipes to make them healthy enough for breakfast.

That is where these quinoa chocolate chip cookies come in.  Who wouldn’t want cookies for breakfast?  Since these quinoa cookies are packed with protein and fiber, they should keep you full for quite some time.

Quinoa is a plant based source of complete protein. Mom win.

I added chocolate chips to my cookies, but you can also use dried fruits if you like.  I think chopped dates or raisins would be great in here as well.

Flourless Cinnamon Pecan Cookies

I have been on a flourless cookie kick lately.  These cinnamon pecan cookies are my latest creation.  These flourless cinnamon pecan cookies are so good and they have no added sugar!  Yep.  These delicious cookies are sweetened only with dates!   I made a caramel out of the dates and it was so good.  The recipe is similar to my flourless salted caramel chocolate chip cookies and my toasted coconut caramel cookies.

Orange Cream Truffles

These Orange Cream Truffles are super good!  The other day, a reader of mine asked if I had any chocolate recipes with orange cream.  I didn’t at the time, but I loved the sound of a dessert like that.  That is how these orange cream truffles were born.  If you like my strawberry creme truffles, then you will love these orange cream truffles!  It’s like a bite sized creamsicle covered in chocolate.  How yummy is that?  I think these truffles would be great without the chocolate too.

No Bake German Chocolate Bites

I am super excited to share these no bake German chocolate bites with you.  Now that we are in the middle of summer, no one wants to heat up the entire kitchen with the oven on.  That is why these no bake German chocolate Bites are so great.  I just love no bake treats, don’t you?

I also made these with NO added sugar!  My husband took one bite and said they taste just like German chocolate cake!  Win!

When you think of a typical German chocolate cake recipe, it is very involved and intimidating.  Not these!  You can make them up in a matter of minutes without a mixer!  These no bake German chocolate bites are vegan, gluten free, paleo and nut free.  They are only sweetened with dates!

For the chocolate coating, I used my 3 ingredient chocolate bar recipe.  I just left out the maple syrup.  If you tend to like things a little sweeter, you can add 1 tablespoon maple syrup to the chocolate.
