I have been loving homemade ice cream lately. It’s getting close to the 100’s here in Dallas, so I like to be able to enjoy a frozen treat.  This lemon coconut ice cream is my latest ice cream recipe.  I just love all things lemon and coconut, so I knew this lemon coconut ice cream would be delicious.  And it was!

Matcha Truffles (Vegan, Gluten Free, Paleo)

Have you tried matcha powder?  Matcha powder is made from green tea leaves.  It contains many health benefits.  Matcha powder is high in antioxidants, can help improve memory and concentration, increase energy, boost metabloism and detoxify the body.

Cherry Chocolate Chip Ice Cream

The warm weather is here and I am cranking out new ice cream recipes.  This cherry chocolate chip ice cream recipe is my latest one.  I just love cherries.  So when my husband brought a bunch home the other day, I knew I wanted to make cherry ice cream.  Of course I had to make mine cherry chocolate chip ice cream, because chocolate always makes everything better!  Am I right?  I love having an ice cream maker.  It is so worth the money when you think about the price of organic, dairy free and gluten free store bought ice cream.  You can make your own ice cream recipes for so much cheaper with just a handful of ingredients.

This cherry chocolate chip ice cream is dairy free, vegan, gluten free and even paleo friendly. It only takes 4 simple ingredients to make it.  I love 4 ingredient recipes.  I really think you could omit the sweetener all together in this if you happen to have some really sweet cherries.  You will need to pit the cherries, which can be a messy job unless you have a cherry pit remover. 3 Ingredient Coffee Popsicles

I was going to post a savory salad recipe today, but I haven’t been able to get the photos finished.  So I hope you don’t mind I share these 3 ingredient coffee popsicles instead.  I don’t know about you, but I used to love Starbucks Frappuccinos.  I am sure they are laden with nasty ingredients and definitely not dairy free or vegan.  Well these 3 ingredient coffee popsicles are the dairy free and vegan version of the Starbucks Frappuccino.  Can it get better than this?  If you like 3 ingredient recipes you may also like my 3 Ingredient Chocolate Bars.

I was going to make this a coffee ice cream recipe, but I have been having issues with my ice cream maker. We put the paddle in the dishwasher and it warped.  So now I am waiting for a new paddle in the mail.  I promise when that comes in, I will be making more ice cream recipes for you all.  Oh, and it you hate the taste of coconut, you seriously cannot taste coconut in these at all.  All you taste is that wonderful creamy coffee flavor.   So good!

Healthy Strawberry Rhubarb Crisp (Vegan)

Healthy Strawberry Rhubarb Crisp.  We are in the middle of berry season here.  I am also starting to see rhubarb showing up in the grocery stores.  I have had numerous requests to do some more strawberry rhubarb recipes.

Currently, the only strawberry rhubarb recipe I have is my strawberry rhubarb sorbet.  Well now I can add a healthy and vegan strawberry rhubarb crisp to the list.

This strawberry rhubarb crisp is vegan and gluten free, but I will also include a grain free option in the recipe instructions. 🙂  I used chia seeds to gel up the filling and I must say the taste and texture is awesome.  I had to stop myself from eating too much at once.

My strawberry rhubarb crisp has a sweet, but tart taste.  I like that, but if you like things even sweeter, I suggest trying the fruit mixture before putting it in the oven.  You can  always add some extra maple syrup if you like.
