Raspberry Coconut Mousse (Vegan)

Yum! Raspberry Coconut Mousse. Just because you are vegan, does not mean you need to give up desserts like mousse.  This healthy mousse is sure to please.

This healthy mousse can be made in a matter of minutes and it’s rich in texture and taste.  If you haven’t guessed by now, I just love the combo of raspberry and coconut.

If you love this combo as well, you may want to check out my Raspberry Coconut Muffins or my Raspberry Coconut Smoothie.  If you don’t want to use raspberries, you can always replace them with strawberries or any other fruit.

 

Raspberry Coconut Mousse

This heavenly raspberry coconut mousse is vegan, gluten free and paleo.   It only calls for a few simple ingredients.  Chocolate chips may be a nice addition as well.

I used fresh raspberries, but I am guessing you can use use frozen as well.  Just let them thaw and drain before you use them in this recipe.

The other day, I saw this video on Facebook.  It was the inspiration for these No Bake Oat Cookies. My recipe is not only healthier than the original, it is also vegan.  Yay!  And really, who doesn’t like a no bake cookie?  You can literally whip these delectable cookies up in just a matter of minutes.

Coconut Curry Cauliflower

I love my veggies, but cauliflower has always been one that I avoided.  That is, until I made this Coconut Curry Cauliflower!  Coconut and curry were made for each other and the flavors go so well in this easy side dish.  If you wanted to make this a complete meal, you could serve it over rice or quinoa.  I also think the additions of some greens, like spinach, would be delicious.  I used the full fat canned coconut cream to make this dish extra rich in flavor and texture.

Chocolate Coffee Cheesecake (Vegan)

Chocolate Coffee Cheesecake.  Who doesn’t like chocolate and coffee together?  If you love them both, then you will LOVE this chocolate coffee vegan cheesecake.

It has 3 levels of chocolate for the chocolate lover in your life.  In my case, the chocolate lover is my husband and I think he is going to devour this!

Honey Mustard Roasted Chickpeas

Have you ever roasted chickpeas?  They are seriously good!  This Honey Mustard Roasted Chickpeas recipe is my latest creation, and they are out of this world awesome.  When I was pregnant with my first daughter, I ate an obscene amount of honey mustard pretzels. For those of you that can’t get roasted chickpeas crunchy, let me tell you a trick I learned recently.  Before you go to make these, lay the chickpeas on a baking sheet and let them dry out for a few hours.  Once they have dried a bit, then mix in all the ingredients and bake.  It really makes a difference!
