Gluten Free Chocolate Chip Gingerbread Muffins. I haven’t made too many gingerbread recipes this season.
Last year I made Gingerbread Donuts, Cranberry Filled Gingerbread Muffins and Healthy Gingerbread Cookies. This year I have only really made Gingerbread Overnight Oats and No Bake Gingerbread Cookies.
I wanted to include some gluten free gingerbread recipes so that is how this one came about.
Easy Quinoa Stir Fry. Sometimes when money is tight, I have to cook from the ingredients I already have in my kitchen. I often make easy stir fry recipes. Many of those creations are not blog worthy though. However, I do get a winner once and awhile.
This quinoa stir fry recipe was one of them. I always have quinoa in my pantry. I love cooking with quinoa because it’s not only a plant based complete source of protein, but it’s also gluten free.
If you don’t care for quinoa, you can always use rice instead.
This easy black bean dip is another one of my husband’s creations. He is also the mastermind behind the pumpkin enchiladas, guacamole and the easy salsa.
He tried making a back bean dip in the past and it was a fail. So when we had some extra dried black beans lying around, he decide to make another attempt at black bean dip. This easy bean dip was a win!
My husband is a huge chocolate lover. I am more a vanilla kind of girl, but he needs a little chocolate every day. So I made these gluten free mint chocolate chunk cookies just for him. He took them to his work and everyone liked them. They had no idea these mint chocolate chunk cookies they were eating were a vegan and gluten free treat.
These little mint chocolate bites of heaven would be perfect for a Christmas party, cookie exchange, or just to nibble on.
For those of you that don’t know, my husband is Turkish. We eat a lot of Turkish inspired meals at our house. Falafel is just one of those. So I made a baked falafel burger. Since traditional falafels are fried, I wanted to make them healthier by doing a baked falafel burger. These baked falafel burgers came out great!
