Gingerbread Roasted Chickpeas

We love gingerbread everything all year long.  How about you?  These Gingerbread Roasted Chickpeas are perfect just about any time.  I love roasted chickpeas because they are an allergy friendly snack.  My daughter is allergic to tree nuts and sesame seeds, so she loves to snack on roasted chickpeas.  This would make the perfect party snack too.

Chocolate Coffee Cookies (Grain Free)

Chocolate Coffee Cookies.  The other day I made some Grain Free Sugar Cookies.  I was so pleased with the way they came out, that I decided to make a chocolate version. Since chocolate and coffee go so well together, I made this new recipe. Coffee cookies.

I knew it was going to be a winner, when I couldn’t stop eating the batter!  That is one thing I love about vegan cookies.  The dough is completely safe to eat! 🙂

These cookies are hard on the outside and chewy in the middle.  Perfect in my opinion. 🙂 I was going to frost them, but I realized I was out of coconut butter to make my 5 minute frosting recipe.  So I just topped them with some natural sprinkles instead. I made my cookies kinda big, so I only got 12 in the batch.  If you make them smaller, you should be able to double that.
