Raspberry Macaroons (Vegan and Gluten Free)

Raspberry Macaroons that are vegan and gluten free.  I am loving all the spring produce!  I picked up some raspberries to make these Raspberry Vegan Macaroons for you guys.

They are super easy to make.  Just a handful of ingredients and no cooking required!  I think this might work with other berries as well.

These take about 5 minutes to whip up.  Then you just need to let them chill in the fridge.  This recipe is also nut free for those that have kids with nut allergies.

I added chocolate chips to mine, but you can omit those if you like.  I just love the flavor combo of raspberry and chocolate.

Coconut Berry Fudge Cups (Vegan)

You guys!  These Coconut Berry Fudge Cups are so good!!  If you like my coconut almond fudge, or my lemon coconut fudge, then you will also love the coconut berry fudge cups.  They best part?  They are super easy and only take 4 ingredients!

Only 2 tablespoons of added sugar in the entire batch.  I made mine in standard sized muffins pans, but you can also do these in mini muffin pans for a bite sized treat.

These little bites of fudge are vegan, gluten free and paleo.  I know it’s kinda early to mention this, but as I was making them, I thought they would be great for Memorial Day or 4th of July parties.

You have got to try these Flourless Chocolate Brownie Bites!  These are so tasty!  You only need a handful of simple ingredients to make them.

These flourless chocolate brownie bites are very decadent in taste and texture.  Don’t let the avocado in the ingredient list scare you.

You can’t taste them at all.  Just like with my avocado chocolate chip cookies or my fudgy flourless brownies.  I was licking the batter off the spoon!

Flourless Chocolate Cookies (Vegan, Gluten Free)

You have got to try these Flourless Chocolate Cookies!!  Ever since I first tried the peanut butter cookies, I have been wanting to do a chocolate version.

So I finally got around to it and these flourless cookies came out great!  These healthy cookies have a very small ingredient list too.  Only 7 ingredients.  If you like these, then you will also like my flourless toasted coconut caramel cookies or my cinnamon pecan cookies.

Chocolate Chip Chickpea Pancakes (Vegan)

I am always trying to sneak foods into my kids diets.  That is exactly what I did with these Chocolate Chip Chickpea Pancakes.

I got the idea to make these pancakes because I have been making these chickpea omelettes lately.  I make a savory version for myself, but I noticed that the chickpea flour had a sweet taste to it.

So I knew these Chocolate Chip Chickpea Pancakes would be good.  These are a little thinner than traditional pancakes, but very good.  Almost like crepes.

You guys!  My kids gobbled these up!  I love that they are getting a boost of protein and fiber with these.  So they will stay full longer.  That is something you don’t get with traditional pancakes.

These chickpea pancakes were a cinch to make.  They are vegan, gluten free and grain free.  The perfect healthy breakfast recipe.

One of the best parts of this recipe is that the only wet ingredient you need is water, so you can make the mix up and store it in the fridge for whenever you get the urge to have some pancakes.
