Nut Free Snack Bars

Let’s face it, a lot of schools are going nut free these days.  As a mom of a child with many food allergies, I totally get it.  That’s why I am trying to create some nut free snacks.  This one came out real good and it is so simple to make!

They were a hit with my daughter and husband.  One of the other great things about this bar is that it is only fruit sweetened.  No added sugar at all!  It almost reminds me of an apple cinnamon KIND bar.  I cooked mine for a few minutes, but I almost thing they can be made raw too.

Instructions

  1. Preheat oven to 350. 
  2. Mix the cereal, sunflower seeds, cinnamon, vanilla bean and sea salt in one bowl
  3. In the food processor , mix the apples, dates and water until a syrup forms.  It will be slightly thick. 
  4. Get a sheet or parchment paper a little larger than the size of your pan, so you have some hanging out the sides.  I used an odd sized pan.  I think it was a 5X13?  A standard 8X8 pan will work just fine.
  5. Once the syrup forms, add that to the dry mixture and mix well. 
  6. Once everything is mixed, transfer the mixture to your baking pan. 
  7. Make sure the parchment is lining the pan first. 
  8. Once everything is in the pan,  press the mixture down firmly. 
  9. Bake for about 10 minutes. 
  10. When it cools, remove the bars from the pan by grabbing the parchment paper sides. 
  11. Cut into bars or squares with a pizza cutter .

I got about 10 bars out of my batch. These should last a week or two. You can even freeze them for longer storage.

Grain Free Blondies (Vegan Too)

Grain Free Blondies you guys!!  I don’t know if you have noticed, but I am trying to branch out and create more recipes that are grain and gluten free.

I have already done so with my Grain Free Blueberry Tart and my Healthy Key Lime Tart.

Since the gluten free and grain free diets seem to be a trend nowadays, I thought you may enjoy this recipe.  These grain free blondies may be the start of many more grain free desserts in the future.

I under cooked mine slightly because I wanted to maintain a gooey and soft center.  Another awesome thing about these blondies is that they are only sweetened with dates.  I love dates!

Prep Time 15 min Cook Time 20 min Serves 9 squares     adjust servings

Soft and gooey blondies that are grain free!

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. In a food processor , grind up the dates.
  4. Add the almond butter and coconut oil and pulse together.
  5. Transfer the mixture to a mixing bowl and add in the eggs, vanilla and milk.
  6. Lastly, add the dry ingredients and mix well.
  7. Cut a sheet of parchment paper and place it into an 8X8 baking dish .
  8. Make sure you have enough paper to stick out the sides so you can easily grab the whole thing out of the pan.
  9. Spread dough evenly inside the dish. The dough will be sticky and using wet hands or a wet spatula can make it easier.
  10. Bake in the oven for about 20 minutes.
  11. Let it cool completely before removing, and then cut the blondies into squares with a pizza cutter .

Crock Pot Applesauce (Vegan, Gluten Free, Paleo)

I have been making this Crock Pot Applesauce recipe for quite sometime now.  I had never put it up on the blog, but after quite a few requests, I decided to do so.  This crock pot applesauce holds a special place in my heart.

When I was a little girl, we would go to my great grandmother’s house for the holidays.  She lived in this really old apartment building that she owned.  It is still in my family to this day.  Us kids always wanted to eat her applesauce.

She made the best I ever tasted.  I think if she were alive today, she would approve of my version.

It is pretty darn good!  The best part?  There is no sugar added.  Slow cooking the apples in allows for the natural sugars to come out.  Plus, adding spices like cinnamon, nutmeg and vanilla beans, makes the dish seem sweet without having to add any sugar.
