Caramel Cashew Spread (Vegan)

I had some dates that were kind of getting dried out.  When that happens, I try and soak them to use them up asap.  That is how this Caramel Cashew Spread came about.

All you need is 2 ingredients to make it and it’s so delicious.  I can see it being used for so many things.

For example, a spread for pancakes or waffles, drizzle over ice cream, swirl some in overnight oats, or just eat it off the spoon!  You can even add some sea salt for a salted caramel taste!

Coconut Pecan Cookies

New cookie recipe for you today.  Originally, I set out to make cowboy cookies.  Then after I had them in the oven, I realized I forgot to add the chocolate chips and oats.  Oops!  Even without those 2 things, these coconut pecan cookies still came out very yummy.  They almost reminded me of the flavors in pecan sandies.  In any case, these flourless cookies were delicious.

Vanilla Creme Truffles

If you have been following this blog for awhile, you know I love truffle recipes.   Since I am more of a vanilla girl, I wanted to make some Vanilla Creme Truffles.  I used vanilla beans instead of extract.  The vanilla beans are a must try!  They add so much more vanilla flavor without the alcohol taste.  These came out quite delicious.  I think they would also be good without the chocolate coating.  They are also a super cinch to make.  If you also like truffles, you may want to try this recipe.  It’s one of the most popular recipes on the blog.

Homemade Snickers Bites (Vegan)

Homemade Snickers Bites.  Before I started eating healthy, Snickers bars were one of my weaknesses.  Once I became vegan, I could no longer eat them.

So I created these homemade vegan snickers bites to help fill the void.  This recipe is super easy and only contains 5 ingredients and very little added sugar.

If you like my German Chocolate Bites, you will love these homemade vegan snickers bites as well.  I could also see these going really well as an ice cream topping.  Yum!!
