3 Ingredient Thumbprint Cookies

I love recipes with minimal ingredients.  These 3 ingredient thumbprint cookies are so easy to make!  They can be made in less than 20 minutes!

These 3 ingredient thumbprint cookies would be great for cookie swaps during the holidays.  I used raspberry jam in mine, but you can use any jam you like.

I think these thumbprint cookies would be great with my blueberry chia jam too.  Yum!  These healthy thumbprint cookies are flourless, vegan, gluten free and paleo.

If you have someone with a nut allergy in your house, you can use sunflower seed butter in this recipe as well.  Or if you prefer almond butter or peanut butter.  I think the peanut butter would give it a pbj&j feel.

Yummy!  I chose cashew butter because it is buttery in texture and mild in flavor.   I made my own cashew butter, but grinding up some cashews in the food processor for about 10 minutes.   You can also use store bought cashew butter if you like.

If you choose to make your own cashew butter, but the cashews in “pieces” vs whole cashews.  The pieces are often much cheaper. 🙂

Pumpkin Coconut Butter (Vegan)

Pumpkin Coconut Butter is awesome!! Have you tried coconut butter?

It’s so amazing.  It’s melt in your mouth delicious.  I use coconut butter in a lot of my raw desserts.   So I decided to create a Fall inspired coconut butter recipe.

That is how this pumpkin coconut butter came to be.  It would make a great spread for toast, you could swirl it in overnight oats or even melt is and drizzle on pancakes or ice cream.  Yum!

Of course if you don’t want to use this dreamy coconut butter in all of my suggestions above, you could just eat it with a spoon!  I’m not gonna lie.  I had a few spoonfuls of this in the process of making it.

Cake Batter Truffles

Yes!  I have some Cake Batter Truffles for you!  A little while back, I made some cake batter coconut butter.  It was seriously amazing!  If you haven’t tried it yet, I highly recommend you do.  Then you can use some of it for this truffle recipe.  Who doesn’t like cake batter right?  Especially when it is covered in chocolate.  Chocolate makes everything better!  These cake batter truffles did not last long in our house!

These truffles are super easy to make.  They are vegan, gluten free and paleo.  If you don’t want to make your own cake batter coconut butter, you can get a store bought version as well.  The store bought version is double the price of my homemade cake batter coconut butter.  If you like flavored coconut butter, you may also like this recipe.  I used chocolate chips to make the chocolate coating, but you can also use my 3 ingredient chocolate recipe.  If you choose to use the 3 ingredient chocolate, then you can omit the almond milk.
