There is a lot of talk about BPA in canned goods.  BPA is used in many products.  Canned goods are a concern because BPA is used in the linings of canned goods.  Why should you avoid BPA?  You can read all about that here.  Eden Foods makes BPA free cans for their beans, but they don’t have canned tomatoes.  According to the website, How Stuff Works, most organic brands of canned tomatoes do still use BPA in their liners.  The article is very interesting because they actually do rate brands. You may be surprised at the ratings.  The good news is, it’s so easy to make your own diced tomatoes!  It literally take just a few minutes.  These homemade diced tomatoes would be perfect in my Crock Pot Tomato Sauce or my Sweet Potato Chili.

5 Minute Maca Energy Bites

Have you tried maca root powder yet?  Maca root is a tuber, kind of like a potato.  It is very well known as a natural energy booster.  It can also help with hormonal issues such as menopause and fertility.  Maca is rich in B vitamins as well.  It can be pricey, but I promise that a little goes a long way, so the bag will last a long time.  Kind of like chia seeds.  You may even be able to buy maca powder out of the bulk bins at Whole Foods.  I love putting maca powder in my Chocolate Almond Butter Overnight Oats because it adds a malty flavor that goes well with the chocolate.   These Maca Energy Bites will not only give you a natural energy boost, but also a pretty good protein and fiber boost as well.  If you enjoy my Maca Energy Bars, you will love these!

Homemade Coconut Milk

If you look at coconut milk in the store, you will notice that pretty much every brand contains carrageenan.  Even the organic brands.  So the only other option is to make it yourself.  The good news is that homemade coconut milk is so easy to do.  It only takes a few minutes.  The best part about homemade coconut milk is that you can flavor it however you like.  I like to add a couple dates for sweetness, but you can also add in some chocolate for a sweeter treat. 🙂  This homemade coconut milk would be great in my coconut vanilla chia pudding or my raspberry coconut smoothie.

I had a hard time even locating the ingredients in the actual Reese’s Peanut Butter eggs online.  That should be a red flag right there!  I am sure they are less than ideal.  S

o I thought I would come up with a homemade version of Reese’s Peanut Butter Eggs. It’s easier than you think!  My Copycat Reese’s Peanut Butter Eggs only have 5 ingredients.
