Grain Free Pumpkin Pie

Grain Free Pumpkin Pie.  Who doesn’t like pumpkin pie? I find people will scour the internet for a good pumpkin pie recipe this time of year too.

I’ve been trying pretty hard to get a pumpkin pie recipe just right.  I have had several fails.  I am happy to tell you that this grain free pumpkin pie is delicious.

This pumpkin pie is not only grain free, but it’s vegan, gluten free and soy free as well!  So I am happy to say I finally have a healthy grain free pumpkin pie recipe that is good enough to share!

This pumpkin pie even got the thumbs up from my girls.  They both wanted to eat it before I had a chance to take photos!  Just for the record, they claim to not like pumpkin. 🙂

For the crust, I decided to use a recipe from Elena’s Pantry.  Because, why mess with perfection?  Her crust recipe is amazing and so simple.

Grain Free Pumpkin Pie

Prep Time 20 min Cook Time 60 min Serves 1 pie     adjust servings

    For the crust

    1. Preheat oven to 350.
    2. In a food processor, mix the flour and salt. Then add in the egg and coconut oil and mix until a dough starts to form.
    3. Once the dough forms, press it into a greased glass pie dish . I used a 9 inch. Bake it in the oven for about 9-11 minutes.

    For the filling

    1. In a food processor , blend all the filling ingredients until smooth.
    2. Pour into baked pie crust and bake in the oven at 350 for about 50-60 minutes.

    When mine was done cooling, it still felt slightly loose, so I put it in the fridge and it completely firmed up. That worked out great. I think that arrowroot is just a tad less stable than cornstarch. However, it is free of GMOs and that’s why I used it over cornstarch. Enjoy!

    You can Save Money By Making Your Own Hummus!!  Hummus is probably one of the easiest things you can make yourself.  It takes only minutes to make.

    Most store bought versions contain unwanted additives as well as GMOs.  If you look at the ingredients in Sabra’s Classic Hummus, they are as follows:

    Cooked Chickpeas (Chickpeas [Garbanzos], Water), Tahini (Ground Sesame), Soybean Oil, Garlic, Salt, Citric Acid, Potassium Sorbate Added to Maintain Freshness, Natural Flavors. Classic Hummus

    Why is there soybean oil in hummus?  Traditionally, it’s made with olive oil….and you certainly would not use natural flavors if you made it in your own kitchen.  According to Wikipedia, Sabra is partly own by Pepsi.  You know the soda people?  They spent a lot of money lobbying against GMO labeling.

    Save Money By Making Your Own Hummus

    Homemade Hummus

    Ingredients

    • 2 cups cooked or 1 can chickpeas drained and rinsed
    • 1/4 cup tahini
    • Juice of 1 lemon
    • 1-2 tsp cumin (I used two)
    • 3 cloves garlic or 2 tsp garlic powder (I use real garlic)
    • 1/2 tsp salt
    • 1 T olive oil

    Instructions

    1. Process the chickpeas in the food processor or blender to get them started.
    2. Then add all the remaining ingredients until everything is smooth and well mixed.

    If it is too thick, just add a bit of water until you get the consistency you desire. That is it. Sometimes I drizzle a bit of oil over the top. Enjoy!

    Dairy Free Ranch Dressing Recipe

    Dairy Free Ranch Dressing you guys!! I have never met a soul that didn’t like ranch dressing. When we went vegan, my husband really missed ranch.

    We wanted to make a dairy-free ranch dressing that would really curb his craving.  This dairy-free ranch recipe really hits the spot.

    I don’t know about you, but it seems as though a lot of people have dairy sensitivity lately.  My husband and I are lactose intolerant and my younger daughter is allergic to dairy and soy.

    Most of the non-dairy recipes I have seen online use tofu or veganaise as a base.  I was looking for a way to make a soy free ranch dressing recipe and it totally worked!  This is just as easy as the Homemade Peanut Butter and the Healthy Honey Mustard!

    This yummy dressing passed the ultimate kid test.  My 4 year old loved it!  So, now those of you with kiddos that are dairy sensitive can enjoy the taste of ranch.

    I was actually amazed at how well this turned out.  I had my doubts in the beginning.  So here is the recipe.

    Dairy Free Ranch Dressing

    Prep Time 10 min Serves 1.25 cups     adjust servings

    Ingredients

    • 1 cup cashews (I used raw and unsalted)
    • 1/4 cup almond milk (If you like a super thick dressing, just omit the milk)
    • 1 clove garlic minced (I do this using a microplane )
    • 3 T chives finely chopped
    • 3 T parsley finely chopped
    • 3 tsp white wine vinegar
    • salt to taste

    Instructions

    1. Place the cashews in water and soak overnight in the fridge.
    2. Drain and rinse the cashews and throw them in the blender with just enough water to cover.
    3. Blend them for about 1-2 minutes.
    4. Now add the rest of the ingredients and blend on low for another minute.

    That’s it! This made about 1 1/4 cups and should keep for a few weeks in the fridge. I store mine in recycled glass jars.

    Cookie Dough Ice Cream

    Let’s face it.  We all want to indulge from time to time.  I mean, who doesn’t like ice cream, especially cookie dough ice cream?  Problem is, most store bought brands are laden with chemicals and processed sugars.  Even the organic ones.  It’s hard to find one that doesn’t contain carrageenan, which is a possible carcinogen.  So I created this little treat for you.

    It was 80 degrees today in Texas and I broke out my ice cream maker for the first time in months.  If you don’t have an ice cream maker, I highly suggest getting one.  It is so much cheaper to make your own ice cream.  This recipe couldn’t be easier.  It’s dairy free, soy free, can be made gluten free and free of refined sugars.  For the cookie dough part, I used my No Bake Cookie Dough Bites and rolled them into tiny balls.  You will have some extra left over, but I promise they are delicious!

    1. Make sure you have had the ice cream bowl frozen for at least 18 hours. It has to be good and cold. I made the cookie dough ahead of time and had it chilling in the fridge.
    2. Pour all the ingredients except the cookie dough into the ice cream machine .
    3. Turn the machine on. It will take about 15 minutes.
    4. When the mixture starts to look like it is coming together and almost done, add in the cookie dough.
    5. Stop as soon as it looks like soft serve ice cream.
    6. If you wish for a harder ice cream, you can put the ice cream in a bowl and stick it in the freezer for about 15 minutes. That’s it!

    Chocolate Mint Cookie Dough Bites

    Chocolate Mint Cookie Dough Bites.  With St. Patrick’s day coming up, I am trying to think of some vegan friendly desserts.  This recipe came to me after I made my No Bake Vegan Nutella Bites.  These chocolate mint bites remind me of eating mint chocolate chip ice cream.

    They are like Thin Mints without the guilt!  These little balls of goodness are vegan, dairy free, soy free and can easily be made gluten free by using gluten free oats.

    The best part?  They can be made in 5 minutes.  Since there is no egg in this cookie dough recipe, it’s safe to eat right out of the food processor.

    I had to stop my daughter before she ate most them!  They go really well with homemade almond milk.  Yum!

    Instructions

    1. In a food processor mix the cashew and oats until they are a powdery consistency.
    2. Then add the dates, cocoa powder, 2 T milk and peppermint extract and mix until a dough starts to form. If the dough looks dry, add a bit more milk.
    3. Roll into balls and place on a parchment lined baking sheet
    4. Set in the fridge to firm up. I got 12-14 bites out of my batch.

    Vegan Nutella Granola.  I bought some hazelnuts the other day to make my No Bake Nutella Bites.  I had quite a few left over, so I thought about making a Nutella granola.  Yes!

    You can now have dessert for breakfast.  This granola is vegan, soy free, dairy free and contains no refined sugars!
