Vanilla Creme Truffles

If you have been following this blog for awhile, you know I love truffle recipes.   Since I am more of a vanilla girl, I wanted to make some Vanilla Creme Truffles.  I used vanilla beans instead of extract.  The vanilla beans are a must try!  They add so much more vanilla flavor without the alcohol taste.  These came out quite delicious.  I think they would also be good without the chocolate coating.  They are also a super cinch to make.  If you also like truffles, you may want to try this recipe.  It’s one of the most popular recipes on the blog.

Coconut Vanilla Granola (Vegan and Gluten Free)

Coconut Vanilla Granola.  I have to admit, I am more of a vanilla girl than a chocolate girl.  You could probably already tell that from my coconut vanilla overnight oats and my coconut vanilla chia pudding.   I couldn’t get enough of this coconut granola.

I have to admit, this recipe was actually supposed to be granola bars, but when I went to cut them, they crumbled.  Same thing happened with my Blueberry Cashew Trail Mix.

Since the taste was amazing, I decided to share the recipe as granola.  This homemade granola is bursting with vanilla and coconut.

I just love those ground vanilla beans. They make everything so yummy!  If you haven’t tried them, I highly recommend it.

Coconut Vanilla Overnight Oats

Coconut Vanilla Overnight Oats.  Oh. My. Gosh.  This overnight oats recipe may be my most favorite so far.  If you love my Coconut Cream Larabars, you will love these overnight oats too!

Coconut butter just makes everything a little better.  It is so rich and delicious!  I actually didn’t use cranberries in my recipe, I just thought the color was great for the photo. I may try adding them to the recipe next time. Raspberries would be a nice addition too.

I love using steel cut oats in my overnight oats, because I like the crunch.  If you like a smoother oatmeal, feel free to use rolled oats instead.  Both will work out fine in this easy overnight oats recipe.

  1. Throw all ingredients in a jar and mix very well.
  2. Store in the fridge overnight and enjoy the next morning.

I make 5 of these at a time and they hold up well. However, if you want to add fresh fruit, add it in right before you eat it. Everything else is fine to sit in the fridge. Enjoy!
