Easy Broccoli Stir Fry

If you are looking a quick meal idea, this Easy Broccoli Stir Fry is it.  I was inspired to make this recipe by my Thai Peanut Sauce recipe.  I thought it would go really well with the broccoli since I sometimes put broccoli in my Peanut Noodle Stir Fry recipe.

I slightly tweaked the peanut sauce for this recipe.  It came out pretty yummy!

I added peanuts for some crunch and extra protein.  If you wanted, you can stretch this meal by serving it over rice or quinoa.  As is, this Broccoli stir fry is vegan and gluten free.

Simple Arugula Salad

It’s starting to warm up here in Dallas, so I am thinking about salads.  Starting with this Simple Arugula Salad.

Veggie Loaded Chickpea Stir Fry

If you are trying to eat more veggies, you should try this Veggie Loaded Chickpea Stir Fry.  It’s super easy and you can really use any veggies you have on hand.  Just like vegetable broth, it’s a great way to use up leftover odds and ends in the fridge.

The chickpeas add protein to make this a complete meal. You could also serve it with rice or quinoa.  Toasted cashews would be a nice option too.

Healthy Turmeric Cauliflower Rice

You have to try this Healthy Turmeric Cauliflower Rice!  Have you heard about the benefits of turmeric? Turmeric is anti-inflammatory, can increase antioxidants, and lowers your risk for heart disease to name a few.

Cauliflower rice can be a great alternative for those trying to eat a low-carb diet.  It’s very low in calories as well. I don’t even really like cauliflower, but I do enjoy cauliflower rice. It’s super easy to make too.  So is this healthy recipe.

This recipe is vegan, gluten free and paleo approved.  You can turn it into a main dish by adding some vegetables and your favorite protein.  I think carrots and peppers would go really well with the flavors.  For protein, I would suggest chickpeas or tofu if you eat soy. It’s very versatile!

Easy Miso Roasted Broccoli

The other day, my husband Marcus made some Easy Miso Roasted Broccoli.  He shared a picture of it in my Facebook group. Since it was so well received, he thought to make it over again for the blog.  The first time, he didn’t measure anything. However, the second time he did, so I can share with all of you!

When we first made it, we were using up some soy-based Miso paste we had in the fridge.  The second time, we used a chickpea miso paste.  Both came out very good.  I just wanted to share that there was a soy free option. 🙂

In case you were wondering, you can find miso paste in the refrigerated section.  Near the tofu and other Asian products.  Almost any health food store will have it.  I got mine at Whole Foods.

This broccoli is so delicious, you will want to just eat it off the tray!
