Slow Cooker Ratatouille Soup

I have a new slow cooker recipe for you!  This time it’s slow cooker ratatouille soup.  One can never have too many soup recipes right?  Especially when they are healthy soup recipes.  Even better if they are slow cooker recipes.  This slow cooker ratatouille soup will not disappoint.  It’s loaded with flavor.  I hope you enjoy it as much as I did.

If you wanted to add more protein to this soup, I could see white beans or kidney beans going real well in here.  This soup is great on it’s own though.  Plus the house will smell amazing!  Unlike most soup recipes, this one contains no broth.  Most of the vegetables release so much water in the cooking process, that there was no need for broth.  This recipes makes a very large amount of soup.  It’s quite budget friendly.  I store mine in serving sized containers in the freezer for easy meals on those busy days.

Creamy Mushroom and Spinach Pasta

Mushrooms and spinach are two of my favorite vegetables.  They go so well in this creamy mushroom and spinach pasta.  This is a healthy meal that doesn’t take very long to make at all.  I used brown rice pasta in this creamy mushroom and spinach pasta to keep it gluten free.  You can probably use regular pasta as well if you have no issues with gluten.  If you also enjoy spinach and mushrooms together, you may also like this recipe.

I used full fat coconut milk in the can to give this pasta a creamy texture and taste.  Not only does the coconut add to the taste, but the richness of it will keep you satisfied after only a small amount.   This creamy mushroom and spinach pasta is more heavy on the vegetables than it is on the pasta.  If you are grain free, you may also be able to make this dish with zucchini noodles.

Homemade Enchilada Sauce

Homemade Enchilada Sauce that is vegan too!  My husband does a lot of the savory recipes for this blog.  This homemade enchilada sauce recipe is all his.  This vegan enchilada sauce is super easy to make.

It’s packed with flavor since we roasted the tomatoes prior to using in the sauce recipe.  Not only does this homemade sauce taste delicious, it will make your house smell amazing too!

Most store bought enchilada sauces contain unwanted additives and also processed sugar.  This sauce recipe containes neither!

Some of the other recipes my husband has created are the Peanut Noodle Stir Fry, Sweet Potato Chili and Pumpkin Enchiladas.

I often will make a large batch of quinoa at one time.  Then I stick half in the fridge and half in the freezer.  That way, I always have some on hand to add to meals.  My husband has been trying to eat less and less grains, so we have been eating a lot more quinoa than rice these days.  I hope you enjoy quinoa, kale and sun dried tomatoes recipe.   One more thing.  Have you ever tried massaged kale?  OMG it is life changing! I always though kale was gross until I learned to massage it.  I made this short video with my daughter to show you how.

You can definitely use massaged kale in this recipe instead of baby kale.  Either way would be great.

I just love roasted Brussel sprouts.  There was once a time I hated them, but this recipe converted me.  Ever since then, I have been roasting Brussel sprouts any way I can.  This is my latest roasted Brussel sprouts recipe.  This time I added sweet potato.   Another one of my favorites!

These Smokey Sweet Potato Brussel Sprouts were seriously amazing you guys!  When I ate them, I also added some pecans and avocado.  So good! I will be making this again for sure.  This recipe would be great as a side dish.  You could also add your favorite protein to make it a complete meal.
