Maple Vanilla Almond Granola.  All my favorite flavors in one delicious recipe! This is a very old recipe that I never share because it went into my first cookbook.  However, now that 3 years have passed, I am allowed to make it public on the blog again.  Yay!

This recipe came to me after I started using this:

Can I just say that I hate cold cereal?  It is highly processed and always leaves me hungry an hour later.  Granola keeps me satisfied until lunch time so I eat it almost every day.  Here is my latest recipe that I hope you will enjoy as much as I do.  My husband said it was my best so far.

 

This healthy granola recipe is vegan and gluten free.  Originally, I used ground vanilla beans, but for the video, I used vanilla extract.  I was out of ground vanilla beans.  I like it better with the beans, but it’s pretty tasty with the extract as well.

Maple Vanilla Almond Granola

Maple Vanilla Almond Granola

Prep Time 5 minutes Cook Time 45 minutes Yields 4 cups     adjust servings

 

Ingredients

Instructions

 Preheat oven to 350.  In a bowl, add all the ingredients. Mix well.

Spread mixture onto a lined baking sheet.  Bake for about 40-45 minutes, stopping halfway through to shake the granola around.

 This should keep in an airtight container for at least a week.  You can even freeze it for longer. Enjoy!

  1. Hello! Thank you for the wonderful recipe! I am SO excited to find a use for all the almond "pulp" I get from making almond milk. It turns out that I can make a double batch of this granola each time I make a batch of almond milk. I have been trying various granola recipes and this one is my favorite! I had to improvise a little because I didn't have any applesauce or enough maple syrup. Instead, I used coconut oil and maple/honey combo. I just melted the coconut oil with the maple/honey/vanilla on the stove, then added in the salt and poured over the dry ingredients. It came out fabulous! Thank you again!
  2. This was so good! We usually buy a vanilla almond granola cereal at Trader Joes and they were out last time we were there - after making this we will stick with this one! I used sliced almonds instead and vanilla extract - awesome recipe
  3. I live in Madagascar and have a ready supply of ground vanilla...you don't want to know how much I pay for it. :) I stumbled upon your recipe and have made it twice now for my family. Instead of any Maple Syrup, which I CANNOT get here, I use honey which is also readily available. I leave out the almond meal, for the same above reason. It's delicious! Thanks for sharing!
  4. Hmmm, I would love to substitute the cranberries with dried strawberries and then add some mini dark chocolate chips to it after it has been baked and cooled.
  5. I'm making this now and my house smells amazing! I added unsweetened shredded coconut and some cinnamon and nutmeg. I tried a little before baking and it is so delicious, I could have kept eating it cold! Can't wait to have some for breakfast. yum.
  6. Love how simple this recipe is! Very apprehensive about trying it, though. I've tried one too many granola recipes that ended up in a burnt mess. Could my oven be too hot? The recipe I tried today called for a 300* oven and I even used parchment paper and it still burned. Your recipe calls for 330* so you can understand my apprehension. But I really want to try this one. Instead of the ground vanilla bean, could I use pure vanilla extract?
    1. You can use vanilla extract. I never had an issue with it burning, but maybe you can keep a close eye on it and stir it around often? You can also try a lower setting on your oven.

  11. I am allergic to nuts. Would ground sesame seeds be a good replacement for almond meal? I will probably add some dried fruit instead of the almonds. Any suggestions appreciated.
