Healthy Vegan Apple Pie (Gluten Free)

Apple Pie that is vegan and gluten free!  Last night I had the urge to make crock pot applesauce.  Just thinking about it reminds me of the applesauce my great grandmother used to make when I was little.

After I gathered all the ingredients, made the apple sauce, and tasted the final product, I immediately thought to make a homemade apple pie.  Here in Dallas today, its cold and overcast.  Just perfect for staying in and enjoying some comfort food.

I re-vamped this recipe to make it gluten free as well as paleo friendly.  It’s super easy!  I made the apples in the crock pot, but you can probably to it in the instant pot as well.

Ingredients

    For the filling

    For the pie crust

    • 2 1/2 cups almond flour
    • 1 flax egg (real egg works too)
    • 2 tbsp maple syrup
    • 2 T coconut oil

    Crumb topping

    • 4 T coconut sugar
    • 4 T almond flour
    • 2 T melted coconut oil

    Instructions

      For the filling

      1. Combine all ingredients in a slow cooker.
      2. Cook of high, stirring every once and a while, and it should be done in 3-4 hrs.

      Grain Free Crust Option:

      1. Throw everything in the food processor until a dough starts to form.
      2. Press dough into a greased pie shell.
      3. Bake for 9 minutes. Let cool.
      4. Once the apple mixture is done, add it to the pie crust.

      For the topping:

      1. Sprinkle on top of the pie.
      2. Bake in the oven at 350 for about 5 minutes.

        1. Yes, I slice the apples for the slow cooker. You can fill the pie with the apples in soft chunks or let them break down completely like applesauce. Maybe you can sub a bit of applesauce for banana?
              1. I made this last night and it turned out fantastic!! I did as you suggested. I took some of the applesauce out of the crockpot and used the baby bullet to puree it. I used that to bind my crust instead of banana! Thank you so much!!

      3. Question - for the topping - in the ingredients you list coconut oil but in the directions you say mix the oats with the butter - which is it? Butter or coconut oil? This sounds delicious and I want to try it!
        1. I used to use butter, but now I use coconut oil. I guess I forgot to reflect that in the method. Editing now. You can use either one. :)
      4. Have you tried Chebe flour GLUTEN FREE. Their all purpose bread mix makes everything. They use manioc flour and starch. I made gluten free choc chip cookies that you would never know are gluten free. Used dates for sugar. Well, it is not organic but maybe you can get inspired from it. Best rolls best everything taste like it has gluten in it. I know you are trying a gluten free diet so I was passing this along. Go to the online store and you can buy in bulk.
      5. I love the idea of this recipe as we totally rely on breakfast bars to get out of the house in the morning. Unfortunately I forgot the applesauce and they were very dry but great on yogurt! We are going to try again tonight.
      6. After adding the apples to the crust, it says cook for 25 minutes. After the toting are listed, it says cook for 25-30 minutes. Is it 25-30 minutes total, or is it 50-55 minutes total? Thanks.
      7. So, When You MAke The Grain Free Crust, You Put In The Apples And Bake For 25 Min, Then Do The Topping And Bake For Another 25, Right? The Crust Was Perfect Around The Edges, But The Bottom Was Soggy. I ThinK My Apple Mixture WaS Too Wet.
      8. For the grain free are you suppose to bake at any step? Or bake with filling then apply topping and no more baking?
