Black Bean and Corn Salad (Vegan)

This black bean and corn salad is really easy and costs almost nothing to make.  At our house, we eat lots of cold salad and this is black bean and corn salad is one we have made on occasion.

Since the new year is approaching, I wanted to make sure to put more cold salads on the blog for those that are looking to lose some weight.

This is really versatile.  We made ours vegan with no cheese or meat, but you can most certainly add them if you wish.  We have talked about adding wild rice or quinoa to ours to make it last longer.  You could also wrap it in a tortilla or lettuce wrap.  The possibilities are endless really!

Black Bean and Corn Salad

Black Bean and Corn Salad

Prep Time 20 min

Ingredients

  • 3 cups black beans
  • 1 cup cherry tomatoes halved
  • 1 red pepper chopped
  • 2 cups corn (please make sure to buy this organic)
  • 2 green onions sliced
  • Juice of 1 small lime
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 T avocado oil
  • 1 avocado sliced
  • salt to taste

Instructions

  1. Throw everything in a bowl and mix together.  That’s it.  Super easy.  Hope you enjoy it!

  2. Thanks for sharing all the great recipes! I have made this salad before but I put a little bit of Arugula in it. I'm not usually a fan of Arugula because it tastes bitter to me, but in this type of salad it really brings everything together :)
