Lemon Larabar Bites (Vegan and Gluten Free)

Lemon Larabar Bites that are vegan and gluten free.  If you have been following this blog for a long time, you know that I love larabars.

Especially if they are homemade larabars!  I have had several requests to do a lemon larabar recipe, so here it is.  I absolutely love lemons, so I was excited to create the larabar version.

They came out so good!  I am happy to tell you that these are grain and gluten free.  If you have a nut allergy, you can try making them with sunflower seeds.

These homemade lemon larabars make the perfect snack because it only takes minutes to make them and there is no sugar added!

Ingredients

Instructions

  1. In the food processor , grind up the almonds and cashews. 
  2. Once they are ground, add in the dates and the lemon juice.  You may need to add in a small amount of water if the mixture looks too dry. 
  3. Once the dough is formed, roll into balls and place them in the fridge to firm up.

  1. I am loving your Larabar recipes. I have one question, how do you get the pit out of a date? I have always used the pitted kind from my health food store. They are smaller than the medjool ones, though. Thank you! Love all your recipes, they are helping me a lot!!
    1. It's super easy! Just cut a slit in the date and open it up. You will see the pit and it's easy to remove. In fact, that is my 3 year old's job. I cut it, and she pulls the pit out. :)
    1. I don't, but I imagine it's similar to the original Larabar since I used all the same ingredients. Just cut the numbers in half because my balls are smaller than the real bars. http://www.larabar.com/products/lemon-bar#nutritional

  4. I made these this morning and they are simple to do!! Mine don't taste very lemony, but like them anyway. Now, to try all your other flavors!!!! Need more dates, though.
  5. I haven't made these yet, but I will. I wanted to comment about the lemony flavor. If you want the lemon to be more pronounced without being more tart then zest the lemon before juicing and add the zest in along with the dates and liquids.

  7. Hi Melissa! How long are these good for in the fridge? Can they be in the freezer? I live by myself so wanted to know. I could always cut the recipie in half but if they can be in the freezer why not make as many as possible. Thanks!

  8. I hit the button too early! Anyway I lined the bottom of an airtight container with parchment paper and defrosted them on the sink. They taste great!
  9. well these are in the fridge now but I didnt get to totally incorporate the dates there are still some chunks because I think this was to thick and sticky for my vitamix :-( it burned my motor out on it
    1. Oh no! I hope your Vitamix is okay. Next time, you can soak the dates in water for about 15 minutes to soften them.

I hope so too, I dont want to have to replace that...I am getting a food processer now though (gotta love a 30%off coupon and sales) thanks for the tip on the dates I never would have thought to soak them they seemed soft enough to me...I cant wait to start trying other recipes of yours too...Love Love Love overnight oats!!!
  10. I JUST made these but I used doTerra's lemon essential oil instead of a lemon. They are in the fridge right now and I can hardly wait to try them! Lemon Lara Bars are my favorite...but so expensive. Plus, I really enjoy making these. Love your recipes, your blog. Thanks so much.
