Almond Butter Chocolate Overnight Oats

This is one of the easiest breakfasts you can make yourself.  I make 5 at a time and eat them all week.  My husband even takes them to work with him.  They travel very well.  Between the chia seeds and the cacao powder, you are getting a lot of antioxidants.

Also a lot of protein and fiber!  This will keep you full until lunchtime.   If you don’t know what cacao powder is, it is chocolate in it’s most raw form.

It can be bitter, but it’s so good for you.  I usually put a chopped medjool date in my oatmeal and it turns into a caramel overnight.  It gives just a hint of sweetness.  You can also use maple syrup.

Recipe Notes

My recipe makes a thicker oatmeal. If you like yours thinner, just add a bit more milk. Take out in the morning and enjoy. I eat mine cold right out of the fridge. You can also try my Overnight Oats in a Jar.

    1. It's an 8z mason jar. I got a 4 pack of them at Target. Love them so much, I bought a second set! Perfectly sized for these types of breakfasts!
      1. Thanks! I went and bought some Ball jars myself :) But a quick question about those 2 part lids that come with them...do you use those lids when refrigerating your oats? And what if I want to use the lids for freezing (like soups)...can I use the lids for that? The reason I ask is that I read that those lids are meant for canning only and not airtight...What has been your experience with these lids? Thanks for your help. I'm new to all this :)
        1. I use them for putting things in the fridge, but I don't think you can freeze them. I mostly use the jars for oatmeal, granola, sauces and dried goods. If you can with them, I don't think you can use the lids more than once. I also love to drink my juice out of those jars.
          1. I used to do a lot of canning, using those two-part lids. The restriction on the number of uses applies only to canning. If you are just using them to refrigerate something, and they have not been subject to the heat of a boiling water bath of a pressure cooker, you can keep reusing them. It's the heat from the canning process that gives them completely airtight seal, but they have a good enough seal for refrigeration. I don't think they are intended to be used in the freezer. You might try looking for that information on the company's website.
          2. Ball actually makes a BPA-Free plastic jar for freezing...it comes in multiple sizes. http://www.amazon.com/Ball-Plastic-8-Ounce-Freezer-Jars/dp/B000SN0WH0
          3. You can buy canning jars specifically for freezing. I make my own cat food and I freeze it in ball canning jars for the freezer.
        2. YES YOU CAN FREEZE JUST LEAVE HEAD SPACE TO ALLOW FOR EXSPANDING. I DO IT ALL THE TIME WITH MY CARROT JUICE AND MANY OTHER THINGS!..
        3. Kim, Have you ever seen the white 'storage lids' for Ball jars? I LOVE them! I use Ball jars for everything and the storage lids are great for keeping things fresh since the 2 part lids don't provide an airtight seal unless canning them. I use the white lids to store dry beans, lentils, nuts, seeds, granola, homemade coconut or almond milk, fruit infused waters, etc.
          1. Where do they have the white lids? Sounds like a great storage system that is inexpensive - one that I need. Thank you for sharing!
  1. I take it that cacao powder is different from the coca powder you can buy at the grocery? Can you buy it at a natural foods store?
    1. When I need nutrition info for a recipe I put it into nutrition data.self.com. It takes a bit of work to do that, but it seems to be the most accurate place to calculate nutrition. You can also put in custom foods if there's something you use that is not in the site's database.
  2. I make a similar version as well. I take one to work, as does my husband, and my 2 year old eats one a day. I got mine from www.theyummylife.com They call it refridgerator oatmeal
  3. Chocolate + almond butter for breakfast?! Yes please! I love overnight oats but have never done a chocolate version, nor made them with steel-cut oats. I bet they give a nice chew though.
      1. I made this recipe last night! Love the flavour this morning but found the oats a little hard/chewy. Is that how they're supposed to be? I've traditionally done overnight oats with large flake oats and they come out softer.
    1. No, but I bet it would still be really good that way. Maybe you could add a little bit more almond butter and some vanilla?
  4. I love this thing. I made it twice in the last two days and have a third jar in the fridge right now for tomorrow. I made it with almond butter once and with cashew butter the next day. I had a big jar of walnuts in honey and used that instead of the maple (because I don't like maple syrup) and loved the addition of the crunch from the walnuts. I am saving my used almond and cashew butter glass jars to make this. Thank you so much for sharing. It keeps me full into the afternoon.
  5. Yum! This sounds wonderful! I just happen to have some steel cut oats that I bought for something I no longer want to make, so this recipe is perfect for me.
  6. I made the oats last night but they are still hard this morning. :( any suggestions? However it still tastes delicious!
    1. The steel cut oats will have a bit of texture to them. Maybe you can use rolled oats next time? Try heating it a little. It may help.
  7. what if I want to heat up in the morning? do I have to add more milk? Also how long? Sounds great! Can't wait to make. Crystal
    1. I don't. Soaking them overnight gets them soft enough. They have a slight crunch that I like. If you want a smoother version, you can use rolled oats instead.
  8. I am trying to temporarily trying to limit added sugars of any kind, do you have any idea how much stevia would make this dish sweet?
    1. You can use less almond butter or omit the dates. For a sweetener, you can use stevia instead - just make sure it's the pure kind and not the processed one.
