Maca Energy Bars (Vegan, Gluten Free and Paleo)

Maca Energy Bars.  When you start reading all about eating healthy, there are certain foods that come up.  Kale, chia seeds, goji berries and maca are just some of them.  I was curious about maca root powder, so I had to get a bag to try out.

It is pretty pricey, but it lasts a long time.  Kind of like the chia seeds. Maca root is a tuber, kind of like a potato.  It is very well known as a natural energy booster.  It can also help with hormonal issues such as menopause and fertility.

Maca is rich in B vitamins as well.  So I decided to make an energy bar with it.  This energy bar is not only vegan, but grain free and gluten free too.

Ingredients

Instructions

  1. In a food processor , grind the almonds into a course consistency. 
  2. Add them to a bowl with the sunflower seeds, maca powder, flax meal, pepitas, chia seeds and salt. 
  3. In a saucepan, combine the maple syrup, almond butter and coconut oil. 
  4. Mix until all are well combined. 
  5. Add it to the bowl with the dried ingredients. 
  6. Tear a sheet of parchment slightly bigger than an 8X8 pan .
  7. Line an 8X8 pan with the paper. 
  8. Spread in the mixture and pack down tight . 
  9. Place in the fridge to set.  About 1 hour.

I got 8 bars out of my batch. Store them in the fridge or even freeze them for longer storage. Enjoy!

  2. Made these yesterday and the taste incredible!!! But I fear the calories are so high, I would have to substitute a meal for it! It was close to 400 per bar :/ Made them really for my hubby anyway though! How do you manage eating so much of this kind of stuff without gaining weight?
    1. I work out and also don't go too crazy with these types of foods. These would make a great breakfast on the go. I would recommend to use them as a meal replacement. I made them for my husband mostly. A lot of the sweets I make for the blog, I give away. Glad you liked them!
      1. 400 calories...awesome! I burn crazy calories and have trouble keeping the weight on during my busy season (photographer). I've been looking for something like this. I love that they don't require fruit as I prefer to eat fruit separate (30 min before a meal or 3-4 hours after). Can't wait to make theses. May substitute brown rice syrup for the maple. Thanks so much for posting!
    2. Meal replacement only! Not a snack - too high calorie! But I love them for on the run. I have to keep them in a mini-cooler with ice pack, because they get melty out of the fridge.

  5. I really like this recipe because it contains plenty of fat, protein and carbs - a good quantity of each, and there's no cooking of the fats which is awesome! So many grain-free recipes that include whole/ground nuts and seeds need to be baked which of course changes the fats into something not-so-healthy. Ultimately activating them first is ideal but nice to see a healthy recipe not baking nuts and seeds, thank you!
  6. Hi I never heard of maca powder before this until I read about it just now. Is it raw maca powder you are using? Any brand recommendation? Not sure if it is available in my country.
  7. Is there something that I can use in place of coconut oil in your recipes? I LOVE coconut and coconut oil but am now allergic to it. Any suggestions?
