Maca Energy Bars (Vegan, Gluten Free and Paleo)

Maca Energy Bars.  When you start reading all about eating healthy, there are certain foods that come up.  Kale, chia seeds, goji berries and maca are just some of them.  I was curious about maca root powder, so I had to get a bag to try out.

It is pretty pricey, but it lasts a long time.  Kind of like the chia seeds. Maca root is a tuber, kind of like a potato.  It is very well known as a natural energy booster.  It can also help with hormonal issues such as menopause and fertility.

Maca is rich in B vitamins as well.  So I decided to make an energy bar with it.  This energy bar is not only vegan, but grain free and gluten free too.

Ingredients

Instructions

  1. In a food processor , grind the almonds into a course consistency. 
  2. Add them to a bowl with the sunflower seeds, maca powder, flax meal, pepitas, chia seeds and salt. 
  3. In a saucepan, combine the maple syrup, almond butter and coconut oil. 
  4. Mix until all are well combined. 
  5. Add it to the bowl with the dried ingredients. 
  6. Tear a sheet of parchment slightly bigger than an 8X8 pan .
  7. Line an 8X8 pan with the paper. 
  8. Spread in the mixture and pack down tight . 
  9. Place in the fridge to set.  About 1 hour.

I got 8 bars out of my batch. Store them in the fridge or even freeze them for longer storage. Enjoy!

  1. Hi! I made these a few days ago and absolutely love them. One question- when the bars have been out of the fridge for a little bit they tend to crumble apart. Is there something I can add to them to help them hold their shape? Thanks!!
  2. Hi Melissa: These are so good! I made a few substitutions based on what was in my house and it turned out awesome. I didn't have sunflower seeds so I omitted those completely..and I also ran out of maple syrup so I subbed coconut nectar. I know you mentioned you only got 8 bars in an 8x8 pan? Were they huge? I cut mine into little squares (so they last longer…) and I have quite a few… Love your blog and the tasty recipes! Lauren
  3. These look delicious! I just bought my first bag of Maca at Whole Foods and thus far have only tried it in smoothies. I like that it gives them a malty flavor/texture. I love energy bars and can't wait to make this recipe - thanks for sharing!

  5. just made this. just so so nothing great.to a person who is asking about potatoe starch -try it and then decide if you would like it eat it raw(hint potatoe starch is used as a thickening agent foe soups /sauces or for baking-google)
  6. These are seriously awesome! My 16 month old, 3.5 year old and every guest that has tried these LOVE them. Please make them as you will not be disappointed.
  7. Looking forward to making these as a easy on the go meal replacement. My husband doesn't does have a lot of time to eat on the job so this is a great lunch/snack for him. I'm thinking it would be a great snack to take On a bike ride or long hike.
  8. Divided my batch into 16 fudge sized squares. For low carb dieters, I calculated just 8.3 grams of carbohydrates each, or 133.7 grams for the whole batch.
