Coconut Strawberry Overnight Oats.  As you know, I just love my oats.  And my favorite way to eat them is in the form of overnight oats.

Overnight oats, or Oats in a Jar, are so easy and you don’t even need to cook them!  This coconut strawberry overnight oats is my newest creation.

You can make these with either rolled oats or steel cut oats.  I like steel cut oats myself.  They will retain a slight crunch that I like.

If you like a smoother oatmeal, feel free to use rolled oats instead.  These overnight oats are gluten free and vegan. 🙂  If you are not gluten free, feel free to use regular oats.  That is what I do. 🙂

You can make up 5 of these at a time for healthy breakfasts all week.  And since they are already in a jar, they travel great!  Definitely give them a try.

I make 5 of these jars at a time for easy breakfasts all week. They are great to take to work as well. The strawberries should be fine in the jar for a night or two, but if you plan to make more than two at a time, add the strawberries in right before you eat it. Enjoy!

  1. I do not have chia seeds and have not seen them in the store but would like to try this. Would sesame seeds work?
  2. Will the steel cut oats absorb the liquid at all? I've tried a similar recipe using rolled oats but it was so soggy I could not eat it. We enjoy steel cut oats a lot. I do not have chia seeds so I will reduce the liquid.
    1. I use 12 oz I think? It fills the jar halfway so there is plenty of room to stir. I get the jars in a 4 pack at Target.

  6. Hi Melissa, I have made several overnight oats recipes but always using steel cut oats. Just wondering if I could substitute those in this recipe. It sounds fabulous & I must try it! I'm pretty sure it would work but just thought I'd ask your opinion?
  7. I tried this and followed recipe exactly. The oats in the AM were not cooked and it was awful. I'm not sure how you do this with steel cut oats without cooking. Too bad, sounded like a good idea. I'll have to cook the oats then add the other ingredients.
    1. I'm sorry you didn't like it. I have received lots of compliments on the recipe. The oats are not suppose to cook. They just absorb the milk as it sits all night. Some people like to heat theirs up for a minute in the morning. Maybe you can try that?
  8. I love warm oats in the morning and have it most days with cinnamon and raisins so was intrigued at your overnight oat ideas. I made one for the first time with just regular milk, one date, vanilla and a couple of strawberries. I left it for 2 days as it Looked a bit dry but I finally tried it this morning and it was amazing! It was so creamy with so much flavour and so quick and easy and my little one loved it too. Will definitely be trying out your other ideas. Thanks!
    1. You're welcome Lisa! So glad you enjoyed it. Sometimes mine look a little dry in the morning too. I just add a little extra milk and stir again.
  9. Just made these last night for the first time (my first overnight oats!) and ate them this morning. Really easy to put together and so delicious. Also really filling! Nice flavor and texture, even with just the rolled oats (all I had on hand--I just used a little under 1/3 c of almond milk and they didn't get too soggy).
