Lemon Coconut Overnight Oats

If you have been following this blog for a while, you know I am a huge fan of overnight oatsOvernight oats are just so easy and they require no cooking!  Overnight oats also travel very well. Since I love lemon and coconut together, I thought I would try the flavors in this Lemon Coconut Overnight Oats recipe.

This turned out really good!  If you love lemon and coconut together, then you will probably love this!  A super easy, healthy breakfast!

Lemon Coconut Overnight Oats

Prep Time 5 min Serves 1 jar = 1 serving     adjust servings

An easy and healthy breakfast!

Instructions

  1. In a jar, mix all the ingredients and stir well.
  2. Cover the jar and store in the fridge overnight.
  3. In the morning, you can heat it up, or eat it cold. I eat mine cold.

If you like a smoother oatmeal, if you want your oats to have a crunch, you can use the steel cut oats. I like the steel cut oats myself. I make 5 of these at a time for easy breakfast all week. Enjoy!

  1. Yummm, this looks so good. I haven't tried chia seeds yet but will use hemp seed and flax instead. Also planning to add fresh blueberries. I can't wait to try this.
      1. I tried this last night and now have a new favorite breakfast! Ended up using some almonds and pecans my daughter didn't finish and flax seed as my add ins. I prefer more lemon! The fresh blueberries were so good with it. One question though, do you think you could use yogurt instead of milk? I'm always looking for ways to use up our large fage yogurt container from costco so it doesn't go to waste.
        1. I bet you can add some yogurt, but don't replace all the milk all together. I am afraid the oats may not soften enough? Just a guess. Glad you liked it!
  2. As I opened your website to look for my favorite overnight oat recipes, I came across this one. It sounded fabulous. I had to tweak it a bit because I didn't have almond milk or or regular lemons so I substituted for oat milk and Meyer lemon, plus I added the a pinch of the zest from the lemon. And now it's in the refrigerator awaiting to be the star for breakfast. Can't wait!
      1. Just had it this morning and it's delicious! The Meyer lemon gave it a little sweetness and the zest brighten out flavors. You gotta try it (: I'll definitely be making it again.

  5. This looks delicious! There are so many yummy looking overnight oat recipes but I prefer baked oatmeal (I think it's a texture thing). Do you think this could be made as described, but baked instead, like some of your other recipes? I have thoroughly loved your baked oatmeal recipes. :)

    1. Not that important now that I have been making this more often. You can probably through everything in at once.
  7. Hi Melissa, This was such an awesome find! Overnight oats sounds like such a ''make-my-life-easier'' idea. I read that you make 5 at a time to enjoy the whole week. Do you just pre-make them in the jars and only add the milk the night before ONLY to the ONE jar you will be eating the next day or do you put milk in them all at once and they last all week in the fridge? Thanks,
    1. I add everything at once and keep for up to 6 days. I use steel cut oats. If you plan on added fresh fruit, I wouldn't add it until right before you eat it.
  8. I actually use Coconut Nectar for my sweetener which is really low on the glycemic level and natural! It adds more coconut flavor too. I am a coconut fanatic, so I also substituted Coconut Milk instead of Almond Milk. The consistency is the same so you wouldn't have to change the amount of liquid.

  10. hi there, Is there a reason why you use jars to keep the oats overnight? Can I just use bowls covered with cling film? thanks for your advice.
