Blueberry Muffin Bites

I just love these blueberry muffin bites. Who doesn’t like a blueberry muffin?  They remind me of the blueberry muffin larabar.  In fact, I used similar ingredients.  My daughter loves that flavor, so I thought I would make some for her. I’m sure by now, you know that I love homemade larabars. 🙂 These no bake bites came out so good! Not only are these delicious, but they are very easy to make!

These little yummy, no bake bites are vegan, gluten free, dairy free and egg free. You can probably make them grain free by using all cashews instead of the oats. This recipe is a perfect snack for kids too.

Prep Time 5 min Serves 15 bite sized balls     adjust servings

A healthy snack you can make in minutes!

Ingredients

Instructions

  1. In a food processor , combine the cashews, oats, ground vanilla beans and sea salt. Pulse for 1 minute.
  2. Then add in the blueberries, dates and lemon zest and pulse for another minute or two until everything looks well combined.
  3. Roll into balls and place on a parchment lined baking sheet. I used a cookie scoop to form mine.
  4. Stick in the fridge for 30 minutes to firm up.

These bites should last in the fridge for at least 4 days. You can freeze them for longer storage. Enjoy!

  6. What purpose do the nuts serve? My son is allergic so I'm wondering if I could leave them out and still get a good result because these look yummy!
  7. Finally made these! They are so good. Mine came out purple because I used frozen blueberries. I also added 2 tsps of chia seeds for nutrition. My 20 month old picky son loved them so much that he got upset when I tried to break them up for him. He thought I was trying to take them! Lol. He gathered them all up in his arms. Do you have these on the recipe index? Couldn't find them so had to go through old posts.

        1. No you were right! I just checked it out and I never categorized that recipe. It should be under no bake bites now. You may need to delete your cache to see it though. Sorry about that!
