Flourless Peanut Butter Muffins

Flourless Peanut Butter Muffins that are vegan and gluten free.  You guys!  I have a treat for you.  Vegan peanut butter muffins.

It gets even better.  It only takes 3 simple ingredients to make these flourless peanut butter muffins!  This recipe is super easy, requires no mixer and has no added sugar!

These flourless peanut butter muffins are so good.  They are vegan, gluten free, egg free, grain free and dairy free.

You can even keep them paleo by using sunflower butter or almond butter.  I used peanut butter in this recipe because my husband loves it.

I do think these muffins would be fabulous with almond butter though.  One thing I have to point out is that these flourless muffins have a slightly different texture than traditional muffins made with flour.

I think they are totally delicious, though.

Flourless Peanut Butter Muffins

Flourless Peanut Butter Muffins

Prep Time 5 min Cook Time 20 min Serves 12 stanard sized muffins     adjust servings

Only 3 ingredients to make this healthy treat!

Ingredients

  • 2 medium sized bananas
  • 1 cup natural peanut butter
  • 6 medjool dates (pits removed)
  • sea salt optional

Instructions

  1. Preheat oven to 350.
  2. In a food processor , mix all three ingredients until everything is blended well.
  3. Spoon batter into standard sized muffin pans . The muffin pans need to be greased or lined. I use silicone liners for mine.
  4. Bake for 15-20 minutes.
  5. Let them cool completely before removing from the pans.

I added some chocolate chips to the tops of mine. They were great that way! Store these muffins in an airtight container in the fridge. The should last about 4 days. Enjoy!

  2. 2 questions: If you're using silicone liners do you still need to grease them? And do the bananas have a strong flavor?
    1. I didn't grease mine, but if you use paper liners, you will need to grease. The banana flavor does come through.
    2. Just a quick side note on using silicon molds. I don't suggest ever spraying them with oil. Its not necessary and in my experience will ruin your silicon. It seems to break down the smoothness.
  3. They look great! Do you think that prunes would work the same as the dates? And also how many did the recipe make? :)
  4. When I made these the batter was really thick? Is this how it should be or what would you recommend to thin it. (I used a vitamix instead of food processor. )

  6. Hello, I love your recipe and I would like to try it but I've got a little problem. I live in Poland and here we use grams to measure ingredients. Could you tell me mow many grams it is "one cup of peanut butter"? I've checked different sites and usually they say that one cup equals 200-250 grams of peanut butter. Is it correct amount? Thank you for answering.

    1. I think they might be able to be frozen. I haven't tried to know for sure, but I think they would freeze fine.
  8. Peanut Butter, bananas and dates = 3 of my all time favourite foods.....i'm way to excited about these considering they really are so simple but my gosh they must taste amazing! Literally just texted my mother to pick up dates (she's at the grocery store right now) because I will be making these right away!! :)

  10. Omg! Just finished making these and they are WONDERFUL!!! Remind me of banana bread. I used almond butter as well as prunes - came out great! Chocolate chips added a nice complement.
