No Bake Peppermint Brownies (Vegan)

No Bake Peppermint Brownies that are vegan.  They are the perfect holiday bars!  All you need is about 10 minutes to make  them!

These no bake Mint chocolate brownies only call for 5 simple ingredients!  I was eating the batter right out of the food processor and let me tell you it’s delicious!

If you have some guests with dietary restrictions, then these might be a good option.  If you are a lover of all things peppermint, you may also like my 4 ingredient peppermint fudge or my peppermint truffles.

I used pecans in this recipe, but walnuts would be good as well.  I think even sunflower seeds may work for a nut free option.

This easy no bake recipe could be made ahead of time so you have on less thing to cook on the day of your holiday party.

Prep Time 10 min Serves 9 large squares or 18 small squares     adjust servings

Ingredients

Instructions

  1. In a food processor , combine the pecans, chocolate chips and cacao powder. Mix well, but be careful not to over mix so you get nut butter.
  2. Drain the soaking dates and add them into the food processor with the peppermint extract.
  3. Mix until everything is combined.
  4. Line an 8x8 glass baking dish with parchment paper.
  5. Press the mixture down into the baking dish .
  6. Place in the fridge to firm up.
  7. Once firm, cut into squares.
  8. Store in the fridge or even freeze them.

  1. Melissa, all of your recipes are awesome but this one is rediculously awesome. I rolled them into balls and rolled in cocoa powder instead of brownies. Thought they were more truffel like than brownies. So so so good! Thank you for sharing your recipes!
