Chocolate Pixie Cookies

The very first food blog I ever followed was Chocolate Covered Katie.  She is the original queen of healthy desserts.  That is why I was so excited to get the opportunity to review her new cookbook Chocolate-Covered Katie: Over 80 Delicious Recipes That Are Secretly Good for YouThe Chocolate Pixie Cookies was the first recipe I tried.  They are delicious.  I knew they were good when my 5 year old wanted to lick the mixer paddle clean!

Chocolate Pixie Cookies

Chocolate Pixie Cookies

Prep Time 5 min Cook Time 12 min Serves 12-15 cookies     adjust servings

Ingredients

Instructions

  1. In one bowl , mix the dry ingredients.
  2. In another bowl , mix the wet.
  3. Add dry to wet and mix until combined.
  4. Using a cookie scoop , drop cookies onto a lined baking sheet .
  5. Once all the cookies are on the sheet, stick it in the fridge to chill for 1 hour.
  6. Preheat oven to 300.
  7. Bake the chilled cookies for about 12 minutes.
  8. Let the cookies cool completely before removing from the baking sheet .
  9. Store in an air tight container in the fridge.
  10. You can probably freeze them for longer. Enjoy!
