Cashew Caramel Squares (Vegan and Paleo)

Cashew Caramel Squares.  OMG, you guys!  I just made the most epic treat.  Initially, I was trying to make a cashew brittle, but the end product was more of a caramel-like texture.

The taste was out of this world delicious!  The best part?  You only need 4 simple ingredients!  If you like desserts with small ingredient lists, you may also like this post.

This healthier holiday treat is vegan, gluten free and paleo approved!  It would be perfect for holiday parties or a cookie swap.

I do need to note, that if kept out of the fridge for too long, they do get quite soft, so these are best stored in the fridge.  I told Marcus to take them to work, but he didn’t want to share haha!

Prep Time 5 min Cook Time 30 min Serves 12-18 squares     adjust servings

Only 4 simple ingredients to make this healthier holiday treat!

Ingredients

Instructions

  1. In a medium sized saucepan , on medium to medium high heat, add the maple syrup and cashew butter.
  2. Stir well so the cashew butter can melt into the maple syrup.
  3. Keep cooking to let the mixture reduce. You will need to keep stirring often and you may need to turn down the heat as the mixture reduces. THIS IS VERY IMPORTANT. Watch it very carefully. You don't want the mixture to burn or over-cook.
  4. Once the mixture has reduced and thickened a bit (about 15-20 minutes later), add the cashews and salt and continue to cook for another 5 minutes or so. You want it to be a syrupy consistency before you spread it on the tray.
  5. Pour the mixture into a parchment lined baking dish . Spread it out so it's about 1/4 inch thick. Place the baking dish in the fridge to cool for about 40 minutes.
  6. Once cooled, cut into squares and store in a container with parchment paper in between each layer of squares. Enjoy!!

  1. I made this tonight and it didn't turn out well. It tastes delicious! But 25 minutes was too long to cook. As soon as I put the nuts and salt in, it seized up and was no longer pourable. Next time I will cook it no more than 20 minutes. What I have here is a sort of crumble. It would be good on ice cream but I'm vegan, so .. lol. Anyway, it is quite tasty.
    1. Vegan ice cream for Diane Noland! Great idea!!! I bet it would taste great on the salted caramel or turle vegan ice cream by purely decadent!!

    3. That’s exactly what happened to me. All was well until I added the nuts. Then BOOM it’s was thick nutbutter again and it wouldn’t reduce/thin out :(
  2. I made these and they were delicious! I did put Annie's Chocolate Chips in it. They were just so creamy and excellent. I am curious about the macronutrients in it, especially if using sugar free maple syrup. Is that info available?

    1. Either should work. I used a baking sheet that was regular size. The mixture doesn't have to fill up the pan. Just spread it out evenly. :)
