I know I have been on quite the soup kick lately. This Chunky Vegetable Black Bean Soup will probably be my last one for a while. I just can’t help it.
Soups are very healthy, filling and budget friendly! Also super easy.
This soup is packed with vegetables and the beans add protein, making this a complete meal. It will definitely keep you full for quite a while. This also makes a lot, so feel free to freeze some too.

Chunky Vegetable Black Bean Soup
Chunky Vegetable Black Bean Soup
This healthy soup is filled with lots of veggies to keep you energized throughout the day. Vegan and gluten free.
Ingredients
- 2 cups cooked black beans OR 1 can black beans, drained and rinsed
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 stalks celery, chopped
- 3 carrots, chopped
- 3 small red potatoes, chopped
- 4-5 cups vegetable stock
- 3 1/2 cups diced tomatoes
- 1 tsp oregano
- Sea salt to taste
Instructions
- Put all ingredients in the slow cooker. Stir well and cook on high for 3-4 hours.
Recipe Notes
This should last 4-5 days in the fridge. You can also freeze it for up to 6 months. Enjoy!
