Cashew Quinoa Granola Bars

Cashew Quinoa Granola Bars are the bomb.  These may be the most delicious bars I have made in awhile.  You definitely need to give these healthy granola bars a try!

A few notes about these healthy snack bars.  They are:

  • vegan
  • gluten free
  • grain free
  • no bake
  • chewy
  • refined sugar free
  • dairy free
  • oil free

They freeze well, so feel free to double the batch!  I used quinoa flakes in my granola bar recipe, but you can definitely use quick oats as well.  I like using quinoa because it is a complete protein and naturally gluten free.

I used cashew butter in my bars because it’s my favorite. Cashew butter is magical!   You really can use any nut butter you like though.  If you need a nut free version, try using sunflower butter.  Enjoy!!

Cashew Quinoa Granola Bars

Prep Time 5 min Serves 8-10 bars     adjust servings

These Cashew Quinoa Granola Bars whip up in minutes. The best no bake bar ever. Vegan and gluten free.

Instructions

  1. In a food processor , combine the maple syrup, cashew butter and almond extract. Pulse.
  2. Then add in the quinoa flakes and sea salt and mix more.
  3. Lastly, add the chocolate chips and pulse until combined.
  4. Press the mixture into a greased 8x8 glass baking dish .
  5. Chill for 1 hour.
  6. Once chilled, use a pizza cutter to cut into bars or squares.

Keep these in the fridge for several weeks. You can also freeze them for longer. Enjoy!

  2. Similar question - what about processing the raw quinoa? I don't have quinoa flakes & would prefer it to oats.
    1. I'm not sure that would work. It may be too hard to process? You can find the flakes at any health food store. I also just had a reader make these with toasted amaranth. She said that came out good.
  3. Hi Melissa, Are the chocolate chips essential to the recipe, and if I reduce the maple syrup will it have an adverse effect - I am a Type 2 diabetic? Thanks, Lynn
    1. You can definitely omit the chips if you like. To reduce the sugar, make sure you add extra nut butter to make up for the liquid. It should work

I just made these and made a few substitutions - I didn't have a full cup of almond butter on hand so I used what was left probably 3/4 cups and then finished off with 1/4 cup of natural peanut butter. I cut the maple syrup in half and mashed 1 small banana into the mix and added 1/2 tsp of ground cinnamon. They smell delicious - just put this into the frig.... I would recommend not using cold nut butter as it was a little hard on the food processor once the quinoa flakes were added. I had to kind of add the chocolate chips by hand once I put the mixture into the 8x8 dish. Can't wait to try one... Thanks Melissa :-)!!
  5. Yummy - will try these with the gluten-free quinoa flakes. I am sure I asked before, but which processor is this?
    1. We don't typically provide nutrition facts with our recipes as we aren't nutritionists. We would hate to get to it wrong. MyFitnessPal might be able to help you get a better idea of the breakdown though.
