Peach Pie Breakfast Bites. These little bites make the perfect breakfast on the go. They are great for school lunches too.
My 8 year old has been really into peaches lately. So last time I was at Costco, I bought a big box of them. Well, she is not eating them as fast as I thought she would. So now I’m creating all kinds of peach recipes trying to use them up.
These little bites are vegan, gluten free, refined sugar free, and oil free. You can whip them up in under 20 minutes! They are freezer friendly too, so feel free to double the batch.

Peach Pie Breakfast Bites
Peach Pie Breakfast Bites
Ingredients
- 3 cups gluten free rolled oats
- 1 tsp cinnamon
- 1/4 tsp ginger
- 2 T flax meal
- 1 large peach, pureed
- 1/2 cup cashew butter (or nut butter of choice)
- 3 T maple syrup
- 1/2 tsp sea salt
Instructions
Preheat oven to 350.
In a small blender, puree the peach.
In a large bowl, add the oats, flax meal, cinnamon, ginger and sea salt. Stir together.
In a small bowl, add the purred peach, cashew butter and maple syrup. Stir well.
Add the liquid ingredients to the dry ingredients and mix together.
Drop mixture into lined mini muffin pans.
Bake for about 8-10 minutes.
Let the bites cool before trying to remove them from the pan.
Recipe Notes
These should last a couple weeks in the fridge and up to six months in the freezer. Enjoy!
