Banana Nut Overnight OatsOvernight oats are very popular these days.  I have been having overnight oats for breakfast every morning lately.

They are so easy and travel well too.  My husband takes them to work with him.  Readers keep asking me to create new flavors, so here are some healthy and vegan banana overnight oats to try.

I’ve been making my overnight oats with stevia lately.  I don’t notice the after taste in this recipe at all.  I love the fact that there is no sugar added.

If you do not want to used stevia, I will put other options in this recipe as well.

Ingredients

Instructions

  1. Throw all the ingredients except for the banana in a jar and mix well. 
  2. Store overnight in the fridge. 
  3. When you are ready to eat, slice the banana and mix it in.

I thought putting the banana in the night before would make it too mushy. I make 5 of these at a time and store them in the fridge for easy breakfasts all week. Enjoy!

5 Minute Banana Ice Cream (Vegan)

This 5 Minute Banana Ice Cream is LIFE CHANGING.  Seriously.  Sometimes you just get a craving for some ice cream.

I make banana ice cream when I get those cravings.  Most store bought ice creams are laden with additives, saturated fat, processed sugar and too many calories.

I have an ice cream maker, but sometimes I forget to put the bowl back in the freezer.  So when I have a sweet craving, I make this super easy vegan banana ice cream.

 

5 Minute Banana Ice Cream

I have a smoothie version of this as well.  My Tropical Smoothie Peanut Paradise is made in a similar way.

The best part of this recipe is that you don’t need an ice cream maker to make this.  I use my vitamix, but I have used a magic bullet in the past as well.

You will be surprised at how decadent this banana ice cream tastes.  You will feel like you are cheating!  Can it get any easier?  I have used this many times to curb a sweet craving.  It really works!

5 Minute Banana Ice Cream

5 Minute Banana Ice Cream

Prep Time 5 min Serves 1 serving     adjust servings

This stuff is so rich and delicious, it feels like you are eating real ice cream!

Ingredients

  • 2 peeled and frozen bananas
  • 2 T almond or peanut butter
  • 2 T almond milk
  • optional add ins: nuts, chocolate chips, fruit, coconut, cocoa powder

Instructions

  1. In a blender, , mix the bananas and the milk. You may need to cut the banana into chunks depending on how powerful your blender is.
  2. Once they are partly chopped up, add in the nut butter.
  3. Continue to blend until you get a soft serve consistency.

You may not even need to add the milk at all, but I think it helps blend everything easier. Spoon ice cream into a bowl and stir in any additional ingredients you desire. That’s it!

Banana Chocolate Chip Donuts

Banana Chocolate Chip Donuts.  It’s been a while since I posted a sweet recipe.  So I am sharing these banana chocolate chip donuts.

If you don’t know already, I have a sweet tooth.  So in order to get my sweet fix, I need to create healthier alternatives.  This banana chocolate chip donut recipe is one way to curb a sweet tooth.

 

Banana Chocolate Chip Donuts

These Banana Donuts are:

  • vegan
  • oil free
  • naturally sweetened
  • simple to make

I may have gone a little over board with the chips.  It’s all good though.  These are healthy enough to eat for a breakfast and they should keep you satiated for quite sometime.

This recipe was supposed to be called Apple Donuts, but I realized I was short on applesauce so I had to improvise by adding banana.

I make a big batch of these so I have some to freeze, some to snack on and some for my father-in-law who loves to taste test these recipes. 🙂

Prep Time 10 min Cook Time 12 min

Ingredients

Instructions

  1. Preheat oven to 350. 
  2. Mix all dry ingredients in one bowl. 
  3. Mix wet into another. 
  4. Add dry to wet. 
  5. Fold in the chocolate chips. Spoon batter onto greased donut pans and bake for 10-12 minutes or until a toothpick comes out clean.

I have 5 words for you.  Peanut Butter banana Breakfast Cookies.  Cookies for breakfast?  Yes please! My girls love when they can eat cookies for breakfast.  These healthy breakfast cookies are a favorite around here.

Peanut Butter Banana Breakfast Cookies

These cookies are healthy and filled with protein and fiber to keep you full for quite a while.  These are great for on the go kids too.  What kid wouldn’t get excited to eat cookies for breakfast?  Meadow ate at least five when they came out of the oven.  She is a ninja when it comes to snatching cookies off the baking sheet.

Peanut Butter Banana Breakfast Cookies

Prep Time 10 min Cook Time 15 min Serves 18 Cookies     adjust servings

Ingredients

  • 1 cup spelt flour (for a gluten free version, use gluten free all purpose)
  • 1 1/2 cups rolled oats
  • 1 ripe banana smashed
  • 1/3 cup peanut butter (If you have a peanut allergy, you can sub sunflower butter. I have a recipe here )
  • 1/4 cup pure maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 tsp cinnamon
  • 2-4 T almond milk
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl .
  3. Mix the wet in another. ( If you store your peanut butter in the fridge like I do, you may have to heat it in a saucepan for a minute to soften it. )
  4. Combine wet and dry and stir just until they are well incorporated. The dough will be very sticky.
  5. Spoon onto a lined or greased baking sheets and bake for 12-17 minutes.

Healthy Tropical Smoothie Peanut Paradise

I don’t know about you, but I LOVED Tropical Smoothie when I lived in Vegas.  I think I used to get one every week.  I would always get the peanut paradise because who doesn’t love peanut butter and bananas together? So one day I actually decided to look through the nutritional info they have at the counter.  I could not believe it!  It had 800 calories!  So, I decided to make my own version.  Mine only contains 315 calories and is super easy to make.

I feed this to my daughter for breakfast sometimes and add the flax.  She has no idea she is eating something healthy!

Healthy Tropical Smoothie Peanut Paradise

Ingredients

  • 1 frozen banana
  • 2 T fresh ground peanut butter ( I use Sprouts Organic)
  • 2/3 cup non dairy milk ( I use homemade almond milk , but soy would work fine too.)
  • If you wanted to make it even more healthy, you could add 1 T flax meal

Instructions

  1. Blend everything in a magic bullet until you get the consistency you desire.  I like mine thick so I can eat it with a spoon.  Sometimes, if I feel like getting crazy, I will through in some chocolate chips.
