Coffee Chocolate Overnight Oats (Vegan)

Coffee Chocolate Overnight Oats.  I have another new overnight oats recipe for you!  This time it’s coffee chocolate vegan overnight oats.

We just moved into my inlaw’s house for the next 10 weeks as we begin our kitchen renovation.  I wanted to use my coffee extract in this recipe, but I realized I forgot to pack that and bring it over here.

So I ended up using a little strong brewed coffee to make these Coffee Chocolate Overnight Oats.  I will write the recipe for both if you prefer to use the coffee extract.  🙂

If you haven’t tried overnight oats yet, you need to!  They are super easy and so good.  You can make 5 at a time for easy breakfasts all week.

Overnight oats require no cooking and they travel well too.  My husband takes a jar into the office.  My fave is still the chocolate almond butter overnight oats, but these are pretty darn good too.  Especially if you like all things coffee flavored. 🙂

Hazelnut Coffee Energy Bites

Hazelnut Coffee Energy Bites.  I love hazelnuts.  I love coffee.  So I decided to put them together to make these Hazelnut Energy Bites.

You guys! These are super delicious and very easy to make.  I got some coffee extract the other day and I made some Coffee Chocolate Oatmeal Bites.

Those were delicious, but I knew I wanted to make some sort of no bake treat with it as well.  That is how these Hazelnut Coffee Energy Bites came about.

We are still prepping for our upcoming kitchen renovation and trying to use up what we have in the pantry.  I just happened to have a bag of hazelnuts that needed to be used.

Chocolate Coffee Oatmeal Bites

Chocolate Coffee Oatmeal Bites.  The flavors of chocolate and coffee go so well together in these Healthy Oatmeal Bites.

I have been wanting to make some more coffee flavored treats for a while now and I was having a hard time finding the coffee extract.

Well I finally found some on Amazon.  As soon as it was delivered, I got to work making these Chocolate Coffee Oatmeal Bites.  I used a mini muffin pan to make these, so they really are perfectly bite sized.

You can keep these chocolate coffee oatmeal bites in the freezer when you need a chocolate fix.  My Flourless Chocolate Muffins are also great for that. 🙂

These oatmeal bites are even kid approved.  My 5 year old loved them and between her and my husband, they were gone in 2 days!

These are extra chocolatey because I added chocolate chips in addition to the cocoa powder.  These coffee chocolate oatmeal bites are vegan and gluten free. I hope you enjoy them.

Espresso Vanilla Almond Butter

OMG you guys!  This espresso vanilla almond butter is the bomb.  The idea for this came to me after I heard about this product.

While that almond butter looks and sounds tasty, it does contain agave, which I avoid.  So I wanted to try a homemade version of the espresso vanilla almond butter.

Mine came out delicious and it was also very easy to make!

This recipe takes almond butter to the next level.  I suppose if you didn’t want to make the almond butter, you could make these into no bake cookies as well.

3 Ingredient Coffee Popsicles

I was going to post a savory salad recipe today, but I haven’t been able to get the photos finished.  So I hope you don’t mind I share these 3 ingredient coffee popsicles instead.  I don’t know about you, but I used to love Starbucks Frappuccinos.  I am sure they are laden with nasty ingredients and definitely not dairy free or vegan.  Well these 3 ingredient coffee popsicles are the dairy free and vegan version of the Starbucks Frappuccino.  Can it get better than this?  If you like 3 ingredient recipes you may also like my 3 Ingredient Chocolate Bars.

I was going to make this a coffee ice cream recipe, but I have been having issues with my ice cream maker. We put the paddle in the dishwasher and it warped.  So now I am waiting for a new paddle in the mail.  I promise when that comes in, I will be making more ice cream recipes for you all.  Oh, and it you hate the taste of coconut, you seriously cannot taste coconut in these at all.  All you taste is that wonderful creamy coffee flavor.   So good!
