Chocolate Mint Cookie Dough Bites

Chocolate Mint Cookie Dough Bites.  With St. Patrick’s day coming up, I am trying to think of some vegan friendly desserts.  This recipe came to me after I made my No Bake Vegan Nutella Bites.  These chocolate mint bites remind me of eating mint chocolate chip ice cream.

They are like Thin Mints without the guilt!  These little balls of goodness are vegan, dairy free, soy free and can easily be made gluten free by using gluten free oats.

The best part?  They can be made in 5 minutes.  Since there is no egg in this cookie dough recipe, it’s safe to eat right out of the food processor.

I had to stop my daughter before she ate most them!  They go really well with homemade almond milk.  Yum!

Chocolate Mint Cookie Dough Bites

Prep Time 10 min Serves 12 balls     adjust servings

Ingredients

Instructions

  1. In a food processor mix the cashew and oats until they are a powdery consistency.
  2. Then add the dates, cocoa powder, 2 T milk and peppermint extract and mix until a dough starts to form. If the dough looks dry, add a bit more milk.
  3. Roll into balls and place on a parchment lined baking sheet
  4. Set in the fridge to firm up. I got 12-14 bites out of my batch.

Vegan Nutella Granola.  I bought some hazelnuts the other day to make my No Bake Nutella Bites.  I had quite a few left over, so I thought about making a Nutella granola.  Yes!

You can now have dessert for breakfast.  This granola is vegan, soy free, dairy free and contains no refined sugars!

Chocolate Chia Seed Pudding

I highly recommend this Chocolate Chia Seed Pudding.  I have been really into chia seeds lately.  They are so good for you and the high fiber content keeps you full for a long time.  So when Pacific Foods sent me a few samples of their unsweetened non dairy milk, I knew I had to make a chocolate chia seed pudding.

I already have a Chia Seed Pudding on the blog, but this time I decided to switch it up and do a chocolate version.  I used Pacific’s new unsweetened hemp milk for this recipe.

I love the unsweetened milk because I like to control the sugar in my recipes.  This tastes decadent enough to have for dessert, but it’s also healthy enough to have for breakfast!

I have been pretty stoked lately to see the organic berries coming back to the supermarket.  I have been waiting for them all winter.  They taste so good.

Both my kids loved it.  Even my daughter Olive, who is tube fed, ate this up as you can see from the messy face in the next picture. Who can say no to anything chocolate?

Another great thing about this healthy chia seed pudding is that you can easily take it to work with you.  Just put it in a small mason jar and you are on your way to work!  It’s a healthy breakfast recipe that should keep you fueled all the way until lunchtime.

Homemade Vegetable Broth

I have recently started making my own homemade vegetable broth for a few reasons.  First, most commercial vegetable broths are laden with MSG and other scary additives.  The only decent brand I have found was Pacific Organic.  You can read more about my comparisons of soup broth here.  Making your own homemade vegetable broth is easier than you would think.   The best part?  Homemade vegetable broth costs nothing because you use all the veggie odds and ends that you would normally throw away.

This is the bag I keep in the freezer.  I just throw all kinds of veggie scraps in there and wait until I get a decent amount.  The tomatoes I had in my fridge, but they were almost on their way out, so I threw them in as well.

  • There really isn't a recipe, per say. Just a method. You can throw in any combination of vegetables and it will work.

    In this case, I had cabbage, tomatoes, celery, green onions, garlic and broccoli.  I also threw in some sea salt and a bay leaf for extra flavor.  I threw everything in a pot and filled with water.  On the stove, I brought it to a boil and then turned down to low, covered it and let it simmer for 6 hours.  Most of the veggies break down in the long cooking process.  When it’s done, strain it into a bowl.  If you like a chunky broth, you can puree what is left of the veggies and throw them back in.  I strained mine and this is what I had at the end.

    I made about 10-12 cups of broth.  About enough for 3 large soups.  I just store it in the freezer in serving size containers so I just pull out what I need.  That’s it.  Super easy.

    Yes!  Homemade Pecan Pie Larabars is what today’s post is about.   I just can’t seem to get enough of them.  The Coconut Cream is still my fave larabar recipe, but these pecan larabars are very tasty as well.

    They are also no bake and take a few minutes to throw together.  This is my kind of recipe. Vegan, gluten free and paleo too!

    They taste just like pecan pie with none of the guilt!  Feel free to have two, or three.  No added sugars in here.  They get their sweetness from dates.

    Nature’s candy.  Yum!  Warning….these are addictive.  These larabars are also gluten free and grain free!  I hope you enjoy them as much as I do!

    Instructions

    1. Blend the pecans and the almonds in a food processor until they are fine.
    2. Then mix in the dates.
    3. The nuts will release their natural oils so there is no need for water. If yours looks a bit dry, you can add a tiny amount, but I didn’t have to.
    4. Line an 8X8 pan with parchment ,
    5. leaving enough room for some paper to stick out the sides.
    6. Press the dough evenly into the pan.
    7. Once it’s spread out, use the extra paper to press the dough down with your palms so it’s packed well.
    8. Stick in the fridge to firm up. About 2 hours should be good. 
    9. Once it’s chilled, cut into squares with a pizza cutter .

    Clean Eating Samoas (Vegan, Gluten Free)

    Clean Eating Samoas.  It that time of year again.  When girl scout cookies are everywhere.  Since we are now vegan, we cannot eat them.  My husband was a huge fan of the Samoas, so he asked me to create a healthier samoa recipe.

    I can’t think of a single person who doesn’t like Samoas, can you?  I think these healthy samoas came out pretty good.  The base of this cookie was inspired by my Gluten Free Coconut Cookies.

    Prep Time 20 min Cook Time 11-13M Serves 15 cookies     adjust servings

    Ingredients

      For the cookie

      For the caramel

      For the chocolate

      • 3/4 cup chocolate chips or 1 dark chocolate bar
      • 1/4 – 1/2 cup almond milk

      Instructions

      1. Preheat oven to 350.
      2. Place the almonds and oats in a blender and blend into a fine powder.
      3. This works great in a Vitamix .
      4. Pour contents into a large bowl .
      5. Add the almond flour and the coconut sugar to the almond/oat mixture.
      6. In a smaller bowl , add the coconut oil, applesauce, vanilla, eggs and milk.
      7. Mix well and add to the dry ingredients.
      8. Mix wet and dry just enough to combine.
      9. Place the shredded coconut in a small bowl and set aside.
      10. Roll the dough into little balls.
      11. Take each ball and roll it around in the shredded coconut.
      12. Once it is covered, flatten it with your palm and place onto a lined baking sheet.
      13. To make the caramel, place the dates in a food processor or magic bullet and pulse into a thin sauce, slowly adding warm water to thin it out.
      14. Once it becomes the consistency or caramel, drizzle it over the top of each cookie.
      15. Once each cookie has caramel over it, place in the oven and bake for 11-13 minutes.
      16. As cookies are cooling, you can make the chocolate.
      17. Using a double boiler, melt the chocolate in a glass bowl slowly adding enough milk until you get a thin enough consistency. I added about 1/2 cup.
      18. Once the chocolate is thinned out, drizzle it over the tops and place in the fridge for the chocolate to set.
