Peanut Butter Chocolate Chip Donuts (Vegan)

Peanut Butter Chocolate Chip Donuts that are vegan and gluten free! Who says you can’t have donuts on a whole food diet?  Not me!  I just make them healthier.

UPDATE: This recipe originally appeared on my blog back in 2013.  I had t remove it for 3 years because it went into my first cookbook.  Well, those 3 years are up, so I’m bringing it back to the blog! Yay!

Most donuts are laden with saturated fat, processed sugars and flours.  Not these!  These are baked, not fried and made with whole grains.  Even your kids will love them.

Banana Chocolate Chip Donuts

Banana Chocolate Chip Donuts.  It’s been a while since I posted a sweet recipe.  So I am sharing these banana chocolate chip donuts.

If you don’t know already, I have a sweet tooth.  So in order to get my sweet fix, I need to create healthier alternatives.  This banana chocolate chip donut recipe is one way to curb a sweet tooth.

Banana Chocolate Chip Donuts

These Banana Donuts are:

  • vegan
  • oil free
  • naturally sweetened
  • simple to make

I may have gone a little over board with the chips.  It’s all good though.  These are healthy enough to eat for a breakfast and they should keep you satiated for quite sometime.

This recipe was supposed to be called Apple Donuts, but I realized I was short on applesauce so I had to improvise by adding banana.

I make a big batch of these so I have some to freeze, some to snack on and some for my father-in-law who loves to taste test these recipes. 🙂

Cranberry Coconut Donuts (Vegan)

Cranberry Coconut Donuts that are vegan.  Once again here is another donut recipe.  This time it’s healthy cranberry donuts.   They are just so darn easy to make.

I think out of all the donuts I have made so far, these cranberry coconut donuts are my daughter’s favorite.  She puts cranberries in everything.

In our house, cranberries have become a bit of a bribing tool.  “Meadow, eat your tomatoes.” She replies, “No.” “I will give you a cranberry if you do.”

It works too!  All the moms reading this will totally understand.  🙂  So I knew these would be a hit for her.

Gluten Free Pumpkin Donuts (Vegan)

Gluten Free Pumpkin Donuts.  Just because Thanksgiving is over doesn’t mean we need to give up pumpkin yet.  Here is my second attempt at gluten free baking.

It’s very similar to my pumpkin donuts.

These came out pretty good.  They got the thumbs up from my in-laws.  My father in-law is great.  He will try just about anything I give him to taste.

In fact, when they stop by, he checks the cupboard for the goodies. 🙂  We have a family member who has celiac disease so I will probably be experimenting with more of these gluten free recipes in the future.

So here they are.

Healthy Gingerbread Donuts

So the holiday season is officially here.  Let’s bring on the food!

These donuts are full of flavor, with none of the bad stuff.  My kids and husband could not stop eating them.

I know it is going to be a good recipe when Meadow is willing to lick the beater.  She insisted on wearing her Thanksgiving hat she made at school.  Even Olive had a taste.  I wasn’t able to get a picture of that, but here she is eating a cucumber.

Having the ability to make healthy donuts is huge when you have kids.  My daughter has no idea they are healthy, but since they are in donut form, she will gladly eat them.   Even my 18 month old ate these and she is mostly tube fed still.  This recipe is very similar to my Pumpkin Chocolate Chip Muffins.

I am thinking gingerbread donuts next… 🙂
