Gingerbread Overnight Oats

Overnight oats are some of the most popular recipes on my blog.  I can totally understand why.  They are so easy to make, healthy and filling, and there is no cooking required!  I’m sold.  Probably why I eat them everyday.  With the holidays approaching, I knew I had to come up with a recipe for gingerbread overnight oats flavor.

These gingerbread overnight oats can be made 5 at a time so you have quick grab and go breakfasts throughout the week.  I know there are cranberries in the photo, but not in the recipe. I did that for color, but feel free to add them in if you like.

Instructions

  1. Throw all the contents in a jar and store overnight in the fridge.
  2. In the morning, you can eat them cold, or heat them up for a warm breakfast. Enjoy!

Healthy Gingerbread Pancakes (Vegan)

Healthy Gingerbread Pancakes. We made some healthy pancakes this morning and they came out so good!  We have been creating a Saturday morning tradition with pancakes.

So today was gingerbread pancakes.  We used to go to Starbucks on Saturday mornings until I found out what they put in their pastries.  This is so much better and I can stay in my PJ’s!

To make things easy, because Meadow tends to want breakfast pretty quick, I mixed the dry ingredients the night before.  That way,I just have to add the wet and cook.  Super easy!

Meadow loved these so much that she asked for thirds and didn’t seem to notice that they were served without syrup.

 

 

Even Olive tried some.

 

 

These would be perfect on Christmas morning…or whenever!

Gingerbread Pancakes

Gingerbread Pancakes

Prep Time 10 min Cook Time 10 min

Ingredients

Instructions

  1. Mix all the dry ingredients in a bowl |.
  2. In a small bowl mix the wet ingredients. 
  3. Add wet to dry. 
  4. Using a 1/4 cup scoop, scoop the batter onto a heated and greased pan. 
  5. When the batter starts to bubble, then flip to the other side. 
  6. Serve immediately, or refrigerate or even freeze for later.

Cranberry Filled Gingerbread Muffins

The holidays are here and I cannot seem to get enough gingerbread flavored goodies!  This recipe is a great use of leftover Thanksgiving cranberry sauce.  I had mine in the freezer and pulled it out to make these gems.  For the cranberry sauce recipe, click here.

These would be a perfect Christmas morning breakfast to nibble on as you opened your gifts.  It will also make your house smell amazing!  When they first came out of the oven, my husband, Marcus, inhaled two of them so I knew they had to be good.  These muffins are made with whole grains so they are much healthier than traditional muffins.  This recipe is similar to my healthy gingerbread donuts.  For that recipe click here.

Cranberry Filled Gingerbread Muffins

Preheat oven to 350.  Mix all the dry ingredients in one bowl.  Mix wet into another.  Add dry to wet.  Spoon a small amount of batter into each lined muffin cup.  Add a dollop of cranberry on top of each one.  Fill muffin cups until they are about 3/4 full.  Bake in the oven for 15-17 minutes or until a toothpick comes out clean.  Wait until they have cooled a bit before removing from the muffin pan.  Enjoy!

Healthy Gingerbread Donuts

So the holiday season is officially here.  Let’s bring on the food!

These donuts are full of flavor, with none of the bad stuff.  My kids and husband could not stop eating them.

I know it is going to be a good recipe when Meadow is willing to lick the beater.  She insisted on wearing her Thanksgiving hat she made at school.  Even Olive had a taste.  I wasn’t able to get a picture of that, but here she is eating a cucumber.

Prep Time 10 min Cook Time 15 min

Ingredients

  • 2 1/4 cup spelt flour
  • 1 cup applesauce (unsweetened)
  • 1/3 cup coconut palm sugar
  • 1/4 cup molasses
  • 1/4 cup light oil (I used organic safflower)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg (I used a flax egg)
  • 1 tsp cinnamon
  • 1/2 T ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet into another.
  4. Add wet to dry slowly. Be careful not to over-mix.
  5. Spoon batter into greased donut pans.
  6. Bake for 15 minutes or until toothpick comes out clean.
  7. Place on a wire rack to cool.

Healthy Gingerbread Cookies

Thanksgiving is almost here, and now is the perfect time to start rolling out the gingerbread recipes!  Here’s a healthier version of an old favorite, the gingerbread cookie.  The gingerbread cookie is a great recipe to do with your kids.  My daughter, Meadow, helped me make and cut these gingerbread cookies out.  She also dumped flour all over my kitchen counter and spooned handfuls of dough in her mouth when she thought I wasn’t looking.  Gotta love kids.

Gingerbread Cookies - My Whole Food Life

Most gingerbread cookies I have made in the past end up hard as rocks.  I love that these cookies are a bit on the softer side.  Probably due to the applesauce I put in them.  These cookies have very little fat and contain no processed sugar so feel free to have a few!

Prep Time 2 hr Cook Time 8 min Serves 18 Cookies     adjust servings

Ingredients

Instructions

  1. Mix the dry ingredients in one bowl.
  2. Mix wet in another.
  3. Add dry to wet and mix only until combined.
  4. Remove the dough from the bowl and cut into two equal parts.
  5. Wrap the dough in plastic and refrigerate for at least 2 hours.
  6. Preheat oven to 350.
  7. After two hours, remove the dough from the fridge.
  8. Roll the dough onto a floured surface until it is about 1/4 inch thick. Please use additional flour if necessary.
  9. Cut dough into desired shapes and place them onto a lined baking sheet.
  10. Bake the cookies for about 8 minutes and then let them cool a bit before removing.
  11. Set them aside to completely cool before decorating. Enjoy!

Gingerbread Granola (Vegan and Gluten Free)

Gingerbread Granola.  I know that Thanksgiving has not officially happened yet, but let’s move on to some Christmas food!  One of the first flavors I think of is gingerbread.  I bring you, Gingerbread Granola.

The stores don’t waste any time pushing the holidays out.  I think that I saw the Christmas decorations coming out at Target the day after Halloween.

This granola is so good.  Even as I type, I am munching it. 🙂 This dish would be a great thing to serve on Christmas morning.

My whole house smells like a Yankee Candle now, bringing back memories.  It’s funny how just a smell or a song can transplant you back in time.

Gingerbread Granola!

Prep Time 10 min Cook Time 30 min

Ingredients

Instructions

  1. Preheat oven to 350.
  2. In a large bowl , combine all the dry ingredients. 
  3. In a medium bowl , combine wet ingredients. 
  4. Add wet to dry making sure all the dry ingredients are evenly coated. 
  5. Place onto lined baking sheet and cook in the oven for about 30 minutes, stopping to shake the pans halfway through.  Enjoy!
