Sweet Potato Coffee Cake Muffins

You guys!  I made these delicious Sweet Potato Coffee Cake Muffins.  They taste like a sweet coffee cake, but they come with hidden serving of veggies!  My kids had no idea and ate them up. I promise you will devour them too.  I mean, just look at that crumble topping!  They go perfect with a cup of coffee.

These healthy muffins are vegan and gluten free.  Free of refined sugar, but full of flavor.  I added nice spices like the cinnamon, nutmeg and ginger that will leave your kitchen smelling like Fall.

I made my muffins jumbo sized, but you can make regular muffins as well.  However, the cooking time in the recipe will be for jumbo.  You need to cut down the cooking time for standard sized muffins.

Remember Little Debbie’s cream pies?  I made Pumpkin Oatmeal Cream Pies for you!  These healthier cookies are no bake, vegan and gluten free!  I slightly tweaked my Raw Oatmeal Cream Pie recipe to come up with this one.  It’s perfect for Fall, or whenever!

I used a cashew cream for the cream filling, but you can also do a chocolate cream or even a coconut cream if you want a nut free version.  My brownie batter hummus would also make a yummy filling!

Slow Cooker Apple Butter

Slow Cooker Apple Butter.  I had about 8 apples to use up in the fridge, so I decided to attempt some slow cooker apple butter. I was so glad I did.  Not only was it super easy to make, but it let me use up all those bruised apples!

I added a little bit of sweetener to my apples because I wanted to make sure this was very different than my slow cooker applesauce.

I thought the small amount of sugar would help give it a thicker texture once cooked down.  I really do think it helped, but next time I am going to try it with no sugar at all and see how it turns out.

I know some of you are probably wondering if you can make this in the Instant Pot.  I did find this recipe online if you want to try it.

This wonderful apple butter will make your house smell amazing as it cooks!  It’s perfect to use as a spread or even as a dip. The possibilities are endless.

I am starting with these delectable pumpkin bars.  These healthy bars were inspired by this amazing recipe on Pinch of Yum.

As soon as I saw her recipe, I thought about making a pumpkin version.  It came out great!
