My husband Marcus is very good at whipping up meals with whatever we have on hand.  The other day he made this Red Pepper Eggplant Pasta, but didn’t measure any of the ingredients.  So he made it a second time and measured everything out so we could share it with you guys.  Some of Marcus’s creations have ended up being the most popular recipes on my site.  A few examples are the Sweet Potato Chili and the Peanut Noodle Stir Fry.

Slow Cooker Stuffed Peppers

I just love making slow cooker recipes.  This new slow cooker recipe I have for you today is Slow Cooker Stuffed Peppers.  I already have one stuffed pepper recipe on my blog, but I wanted to do this one in the slow cooker.  I used quinoa for the stuffing, but you could also use rice if you prefer.  Hard to make these stuffed peppers look good in a photo, but I promise you they are delicious!

I made the quinoa separately before adding it to the slow cooker.  This recipe is very easy and makes a lot, so you will have easy dinners all week long.  I used my dairy free cheese sauce in this recipe.  I also think my pizza cheese sauce would be good in this recipe.   I hope you enjoy this stuffed pepper recipe as much as we did!

Mushroom and Bell Pepper Fajitas

Have I mentioned that my husband is a good cook?  This mushroom and bell pepper fajita recipe is one of his creations.  This is another one of his creations and also one of the most popular recipes on the blog.  We have been using his homemade fajita seasoning ever since I posted this recipe.  Homemade fajita seasoning is awesome because you can control the ingredients in it.  These mushroom and bell pepper fajitas came out so delicious!

Fajitas are so hard to photograph.  I did the best I could.  I hope they look yummy to you.  These fajitas are vegan and gluten free.  I topped them with my dairy free sour cream.  It’s amazing.  If you haven’t tried it, you should.  It really taste like sour cream.  Or at least what I remember sour cream to taste like. lol.  And everything is better with avocado.  Agreed?

Homemade Sriracha Sauce (Vegan)

Homemade Sriracha Sauce.  My husband loves sriracha.  He puts it on everything.  So when we started eating a whole food vegan diet, we took a look at the label of the sriracha.

The one that we had been buying was not vegan.  In fact, he could only find one brand of sriracha that was vegan.

Most brands contained a fish sauce and a lot of preservatives.  Even the vegan brand contained preservatives.  So he finally decided to make his own homemade sriracha.  Turns out it’s pretty easy to do!

Wheat Berry Salad with Corn and Peppers

I love the nutty flavor that wheat berries have.  If you haven’t tried them yet, you really should.  They are delicious!  I also have a Wheat Berry Salad With Cranberries on the blog.  Since it’s summertime, I am still on my cold salad kick.  My husband and I came up with this meal from scraps we had in the fridge.  It turned out to be really good!  We used some of our organic and non GMO corn we had stashed in the freezer.

Sometimes when you clean out the fridge, you get the best meals.  This came out so good, we made a second batch the following day.  If you have a gluten allergy, you can replace the wheat berries with quinoa and this will be equally delicious!
