Quinoa & Brussel Sprouts with Balsamic Glaze

We are headed to Disney World in a just a couple days.  Eek!  So I have been trying to clean out my fridge.  That is how this Quinoa & Brussel Sprouts with Balsamic Glaze came about.  It’s so delicious!  I love when you can make a good meal out of the extras in your fridge.  I think you could probably add many other vegetables to this as well. I think carrots, sweet potato or squash would be great additions as well.  I always keep some kind of cooked grain on hand in the fridge so I can add it to meals throughout the week.   This Quinoa & Brussel Sprouts with Balsamic Glaze is gluten free and vegan. 🙂 If you have been wanting to try quinoa, I highly recommend this.  Another favorite quinoa dish of mine is my Quinoa, Tomato and Avocado Salad.  I also use quinoa in breakfast recipes like my Slow Cooker Breakfast Quinoa.

Roasting the Brussel sprouts, onions and garlic in the balsamic glaze helps them develop a sweetness that is so yummy!  I added almonds for a nice crunch and an added protein boost.  I wanted to add hazelnuts, but I was out of them.  Honestly, I think just about any nut will do in this recipe.

Apple Cinnamon Quinoa Bake

Quinoa is not just for savory dishes.  It can be used in many sweet recipes such as this Apple Cinnamon Quinoa Bake.  Even those this Apple Cinnamon Quinoa Bake closely resembles muffins, I decided they were a little too soft to call them muffins.

These almost remind me of my baked oatmeal recipes.  This is the kind of breakfast you eat with a fork more than your hand.  If you like baked oatmeal, but do not tolerate oats well, this is the perfect alternative.

Not only is this Apple Cinnamon Quinoa Bake tasty, it also has no added sugars!  I sweetened mine with dates, apples and applesauce.

This healthy breakfast quinoa bake is vegan and gluten free.  I made mine into jumbo sized muffins, but you can probably bake the whole thing in a pan as well.

You may have to adjust the cooking time though.  This would make a great weekend breakfast.  Your house will smell amazing as it cooks too!

Pumpkin Pie Energy Bites (Vegan and Gluten Free)

Pumpkin Pie Energy Bites.  Time for another pumpkin recipe!  This time it’s pumpkin energy bites.  I already have a no bake pumpkin cookie recipe on my blog, but I wanted to create another one that would be great pre or post workouts.

These energy bites are packed with protein.  While these pumpkin pie energy bites are gluten free, they are not grain free.  If you wanted a grain free option for energy bites, you could probably just use nuts instead of oats.

You can make up these healthy energy bites in just a matter of minutes.  They also have no sugar added.  They are only sweetened with dates and cranberries.  I found cranberries at Natural Grocers that were sweetened with apples vs most cranberries that are sweetened with processed sugar.

I bet these energy bites would be great to put into your kiddos lunch boxes since they are nut free. 🙂

Quinoa Spinach Patties

I run a healthy living group on Facebook.  The other day there was a discussion about some Quinoa Spinach Patties from Costco.  They sounded amazing, but the ingredients were less than desirable.  So I decided to attempt a homemade version of Quinoa Spinach Patties based on the ingredient list.  They came out delicious!  This recipe is very easy to make too.

You can eat these Quinoa Spinach Patties on a bun like you would a veggie burger.  Or you can serve them as is with a side of veggies.  I topped mine with a little avocado and ate them with some roasted vegetables.  I am not a big bread fan, so I preferred them without the bun.  These patties would also be good on top of a salad or in a lettuce wrap.   So yum!  These quinoa patties are vegan and gluten free.

Lentil Carrot Veggie Burgers

I just love homemade veggie burgers.   These lentil carrot veggie burgers are my latest creation.  Actually, my husband came up with these lentil carrot veggie burgers.  It’s quite easy with simple ingredients.  Homemade veggie burgers are super easy and always taste better than the rubbery veggie burgers you can buy at the store.  I always make sure to top my veggie burgers with avocado.  It always makes them that much better.  Then again, avocados make everything better, don’t they?  You could eat these burgers by them themselves, on a bun, or even top a salad with one.  Personally, I like mine without the bun and with a side of veggies like my simple roasted broccoli or my maple glazed Brussel sprouts.  Yum!
