Slow Roasted Vegetables

Yesterday when we picked up our co op basket, I saw that there were 6 yams and two onions.  I thought that they may work well in the crock pot.  So I gave it a try and they turned out to be a delicious little side dish!

Not to mention it was super simple.  I love the idea of throwing everything in a pot and walking away.  So convenient. This dish is sort of an extension of my Seasonal Roasted Vegetables.

Ingredients

  • 6 yams cut in large chunks
  • 1 onion roughly chopped
  • 3-4 large garlic cloves
  • 1/4 cup olive oil
  • 1/4 cup + 1 T balsamic vinegar
  • salt to taste

Instructions

  1. Throw everything into the crock pot and turn on low.
  2. Cook for at least 3-4 hours

Notes

They will end up with a buttery texture and a sweet tang from the balsamic. Yum!

    1. Sorry. That has been corrected. It’s actually 1/4 cup olive oil and then 1/4 cup balsamic + 1 Tablespoon. I guess I was a horrible proof reader back in the early days of my blog.

          1. I usually sub veggie broth for some of the oil in a recipe (an old weight watcher trick) and it usually works…

  2. Excellent and very easy recipe! This would make a great dish for Thanksgiving. It did take longer to cook in my crock pot. After 4 hours on low, it was maybe 50% done. I turned it up on high for another 2.5 hours. I also added some extra garlic cloves.

  3. This recipe sound delish – I imagine any root vegetable could be added – white potato, turnip, carrots, winter squash etc……
