Super Easy Bean Salad with Veggies

This Super Easy Bean Salad is one of the first things I made when I started making my own food. My mother-in-law is Turkish and she was the one who introduced me to it. It’s so easy and a great way to get lots of veggies in your diet.

I love making it with my 3 year old daughter because she will munch on the veggies as she helps throw them in the bowl. That’s a mom win!

I usually make a huge amount of it because it goes fast in our house.  I use dried white beans because they are cheaper than canned white beans and they taste clean without that gross aluminum aftertaste.  All you need to do is soak them overnight and then boil them on the stove until they are soft.

I also usually play around with the seasoning amounts.  Feel free to add more or less to fit your tastes.  I love cumin and that is why I add a good amount.

Non vegans, feel free to add feta cheese in there too.  This dish is served at almost all our family functions.  It is a favorite with almost everyone.  I hope you enjoy it as much as we do!

I filmed a video for this recipe as well.  You can view it below. For more videos, you can subscribe to my You Tube Channel.

  1. Looks very good Melissa. You are becoming a very good cook I must say. Thank you for feeding your children and your husband nutritious food.
    1. Really? I am sorry. Not sure why it's not working. Here is the link to my recipes page on Pinterest. You should be able to pin it from there.
  2. Hi Melissa, I discovered some white beans in my pantry and went straight to your website to see what you wouild do with them :-) Great and easy recipe, but one question: I am not a huge fan of cumin, so any suggestions on what other spices that I could use here? Thanks a lot!
  3. I made this a few weeks ago and it was so yummy! I'm wondering if you could make it with garbanzo beans? I am on a garbanzo bean kick for some reason. I need to try your roasted chickpea recipe obviously!
  4. When you boil the white beans, how much water do you add to the beans? I have never cooked dry beans before and thought I would use them when I try this recipe.
    1. I don't use a set amount of water. I just put the beans in and then add a ton of water. Usually enough to cover the beans + a couple inches above them.
  5. Hi, what do you do with the lemon, is it the juice of the whole lemon in the dressing? That plus the vinegar seems like a lot of acid versus the 1-2 tablespoons of oil?
    1. I used the juice from one small lemon. I just edited the post to clarify. I like the acidic taste in this recipe, but you can always season yours to taste as well.
