High Protein Breakfast Cookies

These High Protein Breakfast Cookies are a must make! I am always trying to think of new ideas for quick breakfasts on the go.  That is where these breakfast cookies come in.

These high protein breakfast cookies are packed with good stuff like rolled oats, hemp seeds, coconut and sunflower seeds.

My daughter and husband loved these breakfast cookies too.  In fact, my daughter loves saying that she gets to eat cookies for breakfast!  This breakfast cookie recipe is also very versatile.  You can really make it your own.

These would be a great little snack to eat before or even after a workout.  They would be great to take on a hike too.  I spent the better part of my twenties backpacking around the country and loved to munch on healthy treats like this one.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients, except the dates, in one bowl. 
  3. Mix all wet in another.
  4. Add wet to dry.
  5. Fold in dates.
  6. Spoon batter onto a lined baking sheet
  7. Bake for about 15 minutes.

    1. They are seeds from the Cannibis plant aka Marijuana. There is no THC in them so they won't get you high. They are actually loaded with protein and good fats. If you are thinking about trying this recipe, you can omit them or sub them out for something else.
  3. Just made these! very good! Just that one little tsp of cinnamon gives them such a yummy warm flavor! I felt cozy eating them! :0) I used slivered almonds instead of hemp seeds bc I couldn't find them and brown rice flour instead of spelt.

My family too is just starting on this journey, and I wanted to ask your advice about a couple of things. I see you say you use only maple syrup and honey. Does the maple syrup need to be grade B? Also, I was wondering about walnut oil - do you buy the organic or no? Finally, with nut butters - do you always make your own? Buy it pre-made? If you do buy pre-made, do you buy only raw? I'm asking these questions because I'm trying to figure out if it's really important to spent the extra money on the pricier items. Thank you so so much!! Keep up the amazing work.     1. Thank you! The maple syrup I always buy organic. Sometimes grade B is cheaper and I will go with that. I don't always make my nut butters. Sometimes, it is cheaper depending on the sale. For example, every few weeks, Sprouts will put their almonds on sale half off. When they do that, I will stock up and make my own. Other times, it's cheaper to buy it made. I always use raw nuts when making nut butters. When I buy them, I make sure the only ingredient is nuts. I usually buy the fresh ground store bought brands. I usually try to buy the walnut oil organic as well. Sometimes, when I don't want to spend the extra money, I buy avocado oil instead. Avocados are on the clean list, so I think it's okay to buy their oils conventional. There are some products I will just not buy conventional due to GMOs or high pesticide residue.   5. If I used coconut flour or almond meal instead of the spelt flour (I don't have any on hand), would I reduce the amounts?

  7. I made these cookies today and I literally cried when my two years old ate it. I'm talking about a kid that only eat fruits, pasta, milk, yogurt , cheese and gummies. I used almond and cashews instead the hemp and sunflower seed. She loved it! Thank you, thank you!

  8. Do you use roasted or raw sunflower seeds? I only have pepitas...so will try that, but trying to decide if I should roast them first.
  9. Sorry for all the questions...have you ever mixed all the ingredients ahead of time for baking later (like the following morning for quick fresh breakfast cookies)? I would love to do this. I guess I could just try it and see how it goes...
    1. If you wanted to that, just mix everything together and form into cookies. Put them on a baking sheet and slide them in the fridge. That way in the morning, you just transfer the tray from the fridge to the oven.
