Vegan Nutella Granola (Gluten Free)

Vegan Nutella Granola.  I bought some hazelnuts the other day to make my No Bake Nutella Bites.  I had quite a few left over, so I thought about making a Nutella granola.  Yes!

You can now have dessert for breakfast.  This granola is vegan, soy free, dairy free and contains no refined sugars!

This granola kind of reminded me of my Peanut Butter Cup Granola.  This would go perfect with my Homemade Hemp Milk.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Take 1 cup of the hazelnuts and grind them in the food processor.
  3. In a large bowl, combine the ground hazelnuts, the other cup of hazelnuts, oats, salt and cocoa powder.
  4. In a small bowl whisk together the maple syrup, applesauce, milk and vanilla.
  5. Add the wet to dry and mix well.
  6. Spread mixture onto a lined baking sheet and bake for about 17 minutes.
  7. Pull out and shake the granola around and put back in the oven for another 15-17 minutes. An added bonus, your house will smell amazing!

  1. This was great. It was even worth de-shelling a whole bag of hazelnuts with a piece of wood :) I do have a question though, where do you get your maple syrup? I was wondering if there is a cheaper place than where I get it online. We treat our syrup like gold since it is so expensive, so a 1/2 cup was alot. Still well worth it though!
    1. Glad you liked it! I get my syrup at Whole Foods or Sprouts. I usually buy the big bottle for $17.99. I also try to stock up on it when it goes on sale.
  2. Made this, but used cashews, as I had 2 cups of them in the cupboard and no one in my family likes them. I pulsed all the nuts in the food processor to disguise what kind of nuts I used. It turned out great! I stirred in some coconut and dried cherries after it cooled. My kids happily chowed some down with milk as an after-school snack.

      1. Welp, that's another one I'll have to make! Do you think the granola would store well in containers (see through or otherwise) if they were in a cool, dark place? I'm super excited about making your vegan Nutella. I loooove Nutella but haven't bought it in a while. I may or may not have any will power when it comes to leaving sweets alone...but now that I've switched to clean eating, it's not quite as bad for me.
        1. I store mine in an airtight container in the pantry. You can store it in the fridge as well if you want it to last longer. I have heard it freezes well too, although I have never tried.
          1. I've only made one batch of just plain granola and did store it in the freezer since I didn't know how fast it would be eaten. It stores just fine but I'd rather keep it in a place where my daughter can grab some if she wants. So anyway, good to know :) Thank you!
  5. Is the maple for sweetness of sticking everything together mostly? I don't like things too sweet but will decreasing the amount of maple syrup affect the texture of the granola? :)
    1. It may effect the texture slightly. If you want, you can use more unsweetened applesauce and less maple syrup. That should be okay.

    1. Thanks Marian! Yes it's unsweetened. I can't remember the brand I used. When you look for a brand, it should contain nothing but cocoa powder in the ingredient list.
  6. I am curious as to what purpose the applesauce serves? I'm allergic to apples and most other fruits. I can only have mango, guava, pineapple, coconut, and melons. Can it be substituted with a thick puree of one of those? Thanks so much!
    1. It just helps hold the granola together without having to add more sugar or oil. Another fruit puree would probably be fine as well.
  7. The maple syrup helps protect the granola from burning while in the oven. If you decrease it too much the oats and nuts will cook too quickly.
