Chocolate Pixie Cookies

The very first food blog I ever followed was Chocolate Covered Katie.  She is the original queen of healthy desserts.  That is why I was so excited to get the opportunity to review her new cookbook Chocolate-Covered Katie: Over 80 Delicious Recipes That Are Secretly Good for YouThe Chocolate Pixie Cookies was the first recipe I tried.  They are delicious.  I knew they were good when my 5 year old wanted to lick the mixer paddle clean!

This book is truly for the dessert lover.  It’s filled with amazing recipes like, Chocolate Infinity Pie, New York Style Cheesecake, Peanut Butter and Jelly Candy Cups and so much more.   All are vegan and made with healthy ingredients.  She even provides nutrition facts and weight watchers points with every recipe.  The best part about these recipes is that they are easy!  To find out more about the cookbook click here.

Chocolate Pixie Cookies

Chocolate Pixie Cookies

Prep Time 5 min Cook Time 12 min Serves 12-15 cookies     adjust servings

Ingredients

Instructions

  1. In one bowl , mix the dry ingredients.
  2. In another bowl , mix the wet.
  3. Add dry to wet and mix until combined.
  4. Using a cookie scoop , drop cookies onto a lined baking sheet .
  5. Once all the cookies are on the sheet, stick it in the fridge to chill for 1 hour.
  6. Preheat oven to 300.
  7. Bake the chilled cookies for about 12 minutes.
  8. Let the cookies cool completely before removing from the baking sheet .
  9. Store in an air tight container in the fridge.
  10. You can probably freeze them for longer. Enjoy!

    1. I am not sure the need to chill. Probably to get the the texture they have? I just followed the recipe instructions from the book.
  4. I'd have to say blueberry pie. My mom decorated cakes all my life so we always had cake around the house. For my birthday, I always asked for blueberry pie! I've been following Chocolate-Covered Katie, too! Love her recipes and would enjoy having her cookbook!
  5. Oh I am so excited about this cookbook! I went to my local Barnes and Noble but it wasn't there :( I'll try my chances at this giveaway but I have a feeling I'll soon be purchasing my own copy on Amazon. Everything I try from Katie's blog is awesome. At least a couple times a month I make her cookie dough dip and fudge pie. They're my favorite.
