Lemon Blueberry Energy Bites

Do you love all things lemon blueberry?  If so, you will love these Lemon Blueberry Energy Bites!  They are the perfect little bite of deliciousness.  These Lemon Blueberry Energy Bites are packed with healthy fats and protein to help fuel you through the day.

These healthy bites are a cinch to make too.  They are vegan, gluten free AND paleo friendly as well!  I hope you love them as much as we did.  Ours didn’t even last one day.

If you want to add even more nutrition, you can also add chia, flax or seeds to these. If you choose to do that, you may need to adjust the liquids as well.

I used roasted and unsalted cashew butter when making these.  If you use unsalted, I suggest adding a little salt to the recipe.  Maybe a pinch?

Lemon Blueberry Energy Bites

Prep Time 5 min Serves 12 bites     adjust servings

Just a handful of simple ingredients to make these Lemon Blueberry Energy Bites. No baking required. Perfect to fuel your day. Vegan, gluten free & paleo!

Instructions

  1. In a mixing bowl , add the cashew butter, maple syrup and lemon juice. Mix well.
  2. Then add the lemon zest, almond flour and unsweetened coconut and mix well.
  3. Lastly, add the blueberries and mix.
  4. Using a cookie scoop , drop bites onto a lined baking sheet .
  5. Place in the freezer to set.
  6. Keep these in the fridge once set.

  1. Hi, thanks for recipe, it looks fabulous. I avoid coconut, any ideas what I could replace it with that will work alongside existing ingredients? Or would you just omit? If omitted would you suggest to amend volume of the other ingredients. Thanks.
      1. Thank you for answering my question will give them a try! Are Ground Almonds (UK) the same thing as Almond Flour?

    1. Coconut flour is tough to sub into recipes because it requires a lot of extra liquid. If you try, I'd love to know how it works out.
  3. Do these, and energy bite recipes in general freeze well? I’d like to spend a day making a ton of different kinds of energy bites and freeze them and just put them in the cooler on play dates in the summer and eat them when they are thawed out. Think I should wrap them individually in Saran Wrap and put them in a plastic container if I do this? Thanks for any info! Love your recipes!
    1. Yes they do! I don't think you need to individually wrap them, but you could layer some parchment paper in between each row. :)
