Homemade Cinnamon Toast Crunch

I made you some Homemade Cinnamon Toast Crunch! One of my favorite things to do is to re-create healthy versions of unhealthy foods.  Cereal is one of those things I didn’t think I could try, but boy was I wrong!

This homemade cinnamon toast crunch came out awesome where homemade cereal is concerned!  I also made this homemade cinnamon toast crunch gluten free and vegan. 🙂

Not only does the store-bought cereal contain a lot of processed sugars and additives, it is also not gluten free.  My version is!  I am trying to make all my future recipes gluten free.

This was a big hit with my older daughter.  She will eat my homemade granola, but she liked this even better.  I’m not going to lie, this recipe is kind of involved, but it is worth it.  I promise!

Homemade Cinnamon Toast Crunch

Prep Time 1 hr, 15 Cook Time 30 min

Why buy cinnamon toast crunch in a box when you can pull it out of the oven?

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl and wet in another bowl .
  3. Add the wet ingredients to the dry ingredients and mix until combined.
  4. Once everything is combined, gather the dough into a ball and wrap in plastic.
  5. Stick it in the fridge to firm up (I waited about an hour).
  6. Once firm, cut the dough in half with a bench scraper .
  7. Put one half on top of a sheet of parchment paper that has been lightly sprinkled with flour.
  8. Take the plastic wrap the dough was wrapped in, and place it on top of the dough. That way, you can roll the dough thin without it sticking to the rolling pin .
  9. Roll the dough as thin as you can. It will probably cover the entire baking sheet. If you want to add the sugar coating, you can do it now.
  10. Just brush the dough with water, and sprinkle the cinnamon sugar mixture on top. I didn’t even do that and it was still good.
  11. Use a pizza cutter to score the dough. I cut mine into little squares, but they were not all uniform.
  12. Once you have done all that, repeat the steps with the second half of the dough.
  13. Bake in the oven for about 15 minutes.
  14. Then carefully flip each piece and bake for another 15-20 minutes.

Watch the cereal carefully, because it can burn easily. Also I stored it in a glass jar in the pantry. It should last at least a week or two. Enjoy!

Apple Cinnamon Waffles (Vegan)

Apple Cinnamon Waffles. Every weekend we try to make waffles.  You can never have too many healthy waffle recipes.   Today we made healthy apple waffles with lots of cinnamon!

We usually make Blueberry Oatmeal Waffles or Strawberry Banana Waffles.  The last couple months, my daughter had soccer early in the morning, so we had to rush out quickly with no time to make waffles.

This past weekend, we were finally able to again.  My daughter requested apple cinnamon waffles, so here you go.

You can use all white whole wheat flour if you want.  I just like to mix it up with some oat flour.  This recipe is super easy and could probably be easily converted into pancakes as well.

It will make your house smell amazing too!  I always make a big batch and then freeze some.  Then you can easily pull one out and toast it on those busy mornings!

  1. Preheat your waffle iron
  2. Mix all the dry ingredients in one bowl. 
  3. Mix wet in another. 
  4. Add we to dry and mix until combined. 
  5. Using a 1/2 cup scoop, spoon mixture onto a greased waffle pan. 
  6. Repeat these steps until all are made.  I got 5-6 waffles out of my batch.  Enjoy!

Pecan Pie Filled Muffins

My daughter loves muffins with surprises inside, so this recipe is for her.  Who doesn’t like a surprise?  I already have my Nutella Filled Banana Muffins on the blog. These muffins contain a sweet little surprise, but they are made with wholesome ingredients.  If you like my Pecan Pie Larabars, you will love these!  This is a great one to make with your kids.

I let my daughter put the filling into each muffin.  It was fun to be able to let her help me bake.

Prep Time 10 min Cook Time 13 min Serves 12 muffins     adjust servings

Ingredients

    For the filling

    For the muffins

    • 1 3/4 cups white whole wheat flour
    • 1/4 cup applesauce
    • 1/4 cup coconut sugar
    • 1 1/2 cups milk
    • 1 egg (I used a flax egg replacement)
    • 2 T coconut oil
    • 2 tsp vanilla beans or extract
    • 1/2 tsp cinnamon
    • 2 tsp baking powder
    • 1/2 tsp salt

    Instructions

    1. Preheat oven to 350.
    2. Mix all the dry ingredients in one bowl .
    3. Mix wet into another.
    4. Add wet to dry. 
    5. Mix only until combined. 
    6. Spoon a small amount of batter into lined
    7. muffin pans.  I used standard sized muffin pans
    8. Take some of the pecan mixture and roll it into a ball. 
    9. Place it on top of the muffin batter. 
    10. Cover the top with more batter. 
    11. Repeat these steps until all are done. 
    12. Bake in the oven for about 13 minutes or until a toothpick comes out clean.

    I got 12 standard sized muffins and 1 jumbo muffin out of my batch. These should last 2 weeks in the fridge, but you can freeze them for longer storage.

    Overnight Oats in a Jar

    I am a fan of all things oats.  Loaded with protein and fiber, but relatively low in calories.  The high amount of fiber keeps you with a full feeling for a long time afterward.  Something that boxed cereal could never do.  I often have homemade granola for breakfast.  This is so easy, I wonder why I didn’t try it sooner!

    I initially saw a recipe on Food Babe’s blog called, The Perfect Parfait.  Her recipe inspired me to try it.  So good!  I love how this recipe is very adaptable.  You can really add whatever you like and change it up daily so you never get bored. I used a recycled pickle jar to hold my oats, but a mason jar would work well too. This is great for those mornings that you really have to rush.

    1. Rinse your groats beforehand. Throw everything in the jar the night before.  If you like things a little sweet, you could throw in some chopped dates or raisins. 
    2. Store in the fridge overnight.  Just pull out and eat in the morning.  Easy as that. This will be a breakfast I will have at least twice a week. I love it and I hope you will too.

    Healthy Homemade Pop Tarts

    I made Healthy Homemade Pop Tarts for you.  I have been thinking about doing a pop tart recipe for quite some time.  After looking at the ingredients on the label, I knew I would never buy those again.

    You can get decent store bought pop tarts with the Nature’s Path brand, but I wanted a homemade pop tart version as well.  Now, I know that store bought pop tarts are normally crisp.  I tried two batches and mine didn’t get crispy.

    Mine are on the softer side.  Most likely due to the applesauce and coconut oil.  However, all my taste testers thought they were good.  So I thought I would share anyway. 🙂  Maybe if you put them in a toaster oven, they will crisp up.

    I filled mine with two different fillings.  Some have my Blueberry Chia Jam and some have my Homemade Vegan Nutella. Make these ahead of time for a quick breakfast on those busy mornings.

    Ingredients

      Healthy Pop Tarts

      For the filling

      • Your favorite fruit spread

      Instructions

      1. Preheat oven to 350. 
      2. Mix all the dry ingredients in one bowl |.
      3. Mix wet in another bowl |. 
      4. Add dry to wet and mix until combined. 
      5. Wrap the dough in plastic and place it in the fridge for at least 30 minutes to firm up. 
      6. Once the dough is firm, cut two pieces of parchment paper the size of your baking sheets
      7. Lay one of the sheets out on the counter. 
      8. Using a bench scraper , cut the dough in half. 
      9. Using a rolling pin , roll the dough ball out onto the parchment, putting the plastic wrap between the rolling pin and the dough. 
      10. Rolling it onto the parchment will make for easy transfer to the baking sheets .
      11. Try to roll the dough into a square shape.  Roll out to about 1/4 in thickness. 
      12. Using a pizza cutter , cut the dough into even squares. 
      13. Put a spoonful of jam on a square and cover with another square of dough. 
      14. Use a fork to press the sides together. 
      15. Repeat this until all have been done. 
      16. Do all the same steps with the other half of the dough. 
      17. Transfer the parchment paper onto the baking sheet and put in the oven. 
      18. Bake for about 15-17 minutes.

      Almond Joy Granola Recipe

      Almond Joy Granola.  I have been slightly obsessed with coconut lately if you haven’t noticed.  You need to try this Almond Joy Granola!   What’s not to love?  I was not always a coconut fan, but have grown to love it in so many ways.

      I already have Almond Joy Energy Bites and Almond Joy Waffles, so why not create Almond Joy Granola.  I have combined my love for coconut, with my love for granola to make this very tasty little snack.  This almond joy granola is a must try!

      This is so good!  It may just be my new favorite.  I have to admit, though, this recipe was not going to be granola.  I was trying to do a baked oatmeal and when I went to pull them out of the muffin tins, they just fell apart.

      But rather than toss it, I just threw it back in the oven for another 15 minutes and made it granola!  Glad I did too, because the coconut got toasty and sweet.  Yum!

      1. Preheat oven to 350.
      2. Mix all the dry ingredients in one bowl . Mix wet into another.
      3. Add wet to dry and mix until combined.
      4. Spread mixture onto a lined baking sheet .
      5. Bake in the oven for 17 minutes.
      6. Pull out and shake granola around and put back in the oven for another 15-17 minutes. Enjoy!
